Description

The Shizu Hamono 1000/3000 sharpening stone lets you maintain the edge of your favorite knives in the traditional way. This effective method is almost a ritual, and ensures impeccable results, keeping your knives performing at their best for longer.

The stone is made from a composite material, and features two sides with different grits, to guarantee a complete finish for your blades.

Red side, medium grit #1000: you can use this side on a regular basis. This is the grain most commonly used for knife maintenance, as it is not too abrasive, and keeps the blade clean and straight.

Here 's a practical tip: if you had to use just one type of grit to maintain your knives, this would be it! Thanks to it, your blade will never be dull, and you'll maintain the knife's performance without removing too much material from the alloy.

Beige face, fine grain #3000: recommended for finishing the edge. The finer the grain, the greater the cutting potential of your knives, as it refines the edge and marks it so that your blade easily penetrates your food.

The frequency of use depends on how you use your knives. As soon as you start to feel a loss of edge, don't hesitate to use the stone to maintain a normal level of wear.

The silicone base is non-slip and ensures safe use of the stone. It is easy to remove thanks to its flexibility (if you prefer to use the stone bare, for example).

Recommendations for use :

- immerse in water about fifteen minutes in advance

- place the upper half of the blade at 45° to the stone

- apply light pressure with your index and middle fingers on the end of the blade and raise it 10-15°.

- during this operation, a black filing will appear: this is what sharpens knives. Once the filings have solidified, add more water and sharpen the rest of your knife (which you can wipe with a soft cloth in the meantime). To find out how sharp your knife is, we recommend the paper test: quick and unambiguous!

- make sure you use the whole surface of the stone when using it, so as not to dig into it unevenly

With this whetstone , you'll be able to keep your equipment sharp over the long term. Don't hesitate to discover the Shizu Hamono knives we offer!

Used dozens of times for several types of steel. Does the job perfectly. Be sure to roughen your blades with a less fine stone if, like me, some of the blades I've had in my hand have no wire left at all!

Guaranteed razor-sharp!

With little experience of sharpening stones, I had to take the plunge in order to guarantee the sharpness of my brand new Japanese knives. After carefully watching a number of stone-sharpening videos and practicing on my old, less-than-stellar kitchen knives, I went ahead and sharpened my Japanese knives. You can immediately feel the difference in the response of the harder steel; the blades fight back! But the result is astonishing: the original sharpness has returned, and the 3000 grain finish gives a razor-sharp edge. This is my first stone, so I'm not in a position to compare, but I'm completely satisfied with the result!
