Shirogamiblade: a top-of-the-range Japanese kitchen knife
The blade of this 24 cm chef's knife is forged with a San Maï structure consisting of a rigid steel core covered by a layer of softer steel.
For this gyuto knife, the core is made of Shirogami 1 steel (also known as White Paper Steel #1), an alloy with a high carbon content of around 1.3% that is renowned for its remarkable hardness of 62HRC Rocwkell. This ensures a very fine cutting edge and excellent edge retention!
This core is wrapped in a top layer of stainless steel, based on San Maï construction, combining the power of carbon with the strength of stainless steel.
The blade surface is finished with a very fine, traditional nashiji hammering, which limits food adherence and gives character to your handcrafted Japanese knife.
The blade features a flat edge for comfortable ambidextrous use!
A Japanese chef's knife with a balanced handle
The handle is made of black pakkawood, a high-density, moisture- and wear-resistant resin-stabilized wood, ideal for everyday use.
The shape is Western-style, ergonomic and ambidextrous, facilitating a comfortable grip whatever the cutting angle, for right- or left-handers!
The handle is attached to the full tang blade by 3 stainless steel rivets and is completed by a bolster for optimum balance of your Japanesekitchen knife.

Caring for a carbon knife
Always clean by hand, using mild soap and a non-abrasive sponge, then wipe blade and handle dry immediately. Never use the dishwasher or leave to soak in the sink. Dry thoroughly to avoid oxidation. Avoid foods that are too hard (bones, frozen foods, very hard cheeses) to prevent micro-shattering.
