Description

A high-performance, versatile craft blade

This 13. 5cm utility knife is part of the TS10 range of handcrafted knives developed by the Japanese company Sakai Kikumori. Its blade is forged from a core of top-grade stainless steel: VG10, renowned in the world of Japanese cutlery for its excellent compromise between hardness, sharpness and strength.

This alloy contains around 1% carbon, for a fine, long-lasting cut. In fact, the hardness of your blade is 60HRC on the Rockwell scale, guaranteeing excellent cutting retention!

The core of the blade is wrapped in a San Maï structure, consisting of two softer layers of steel surrounding the hard core: this traditional Japanese process reinforces the overall strength of the blade while retaining the cutting finesse typical of carbon-rich steels.

The hammered finish is applied by hand. It gives each Sakai Kikumori knife a unique pattern, and also plays a functional role: the dimples thus formed limit the adherence of food to the blade during cutting. What's more, these cells are shaped like a rosette to give your Japanese kitchen knife an elegant look!

Last but not least, thesymmetrical serration ensures ambidextrous use of your Japanese kitchen knife, for both right- and left-handed users. The balance between finesse, sturdiness and aesthetics makes this a universal Japanese knife particularly well-suited to everyday cuts of meat, fish or vegetables.

A Japanese oak handle with a controlled grip

The handle is made from lacquered oak wood, a natural material selected for its resistance to humidity, its stability over time and its warm appearance. The wood is protected by a natural lacquer, which enhances its longevity while highlighting its discreet grain.

Its octagonal shape is typical of traditional Japanese cutlery. It favors a precise, stable grip, and is suitable for both right- and left-handed users. This geometry offers a pleasant contact surface, which improves gesture control, particularly during technical or prolonged cutting.

Elegant, functional, pleasant in the hand and perfectly integrated with the blade, this handle harmoniously completes this handcrafted Japanese knife designed to last!
