The Tamahagane brand is named after the steel used in Japan to make the famous swords with the sharpest edges known to man. The blade of this Universal knife measures 15cm: a cross between a paring knife and a chef's knife, it can be used for many tasks, including peeling large fruits, chopping vegetables and mincing onions. It is advisable to use the chef's knife or a Slicing knife to work on cuts of meat.
Made from VG5 steel, the core of the blade has a high carbon content (approx. 0.7 to 0.8%), giving it a Rockwell hardness of 59 HRC. This hardness gives the blade a razor-sharp edge that will make you enjoy preparing your dinners. What' s more, thishardness means the need for sharpening is less frequent than with standard steel blades. Cutting quality is enhanced tenfold, and it will also wear less quickly than other blades. VG5 looks very similar to VG10 steel, but has the advantage of being slightly more resistant to corrosion(which doesn't mean it's rustproof!). To maintain a sharp edge, opt for a double-sided whetstone, preferably with a 3000/8000 grit. Sharpening should be done in stages to avoid damaging the blade. 3 layers of softer steel cover this hard core to balance suppleness and hardness.
The hammering of the blade is visually very aesthetic and typically Japanese, but it will also help to push food away when cutting, so that it doesn't stick. Indeed, thanks to the small indentations, food is less likely to stick to the blade than with smooth blades, making cutting much more pleasant.
The micarta handle is highly hygienic: a mixture of paper and resin, this material will not absorb bacteria from the environment, a considerable advantage for professionals who work in humid environments.
