The Tamahagane brand bears the name of a steel frequently used in Japan to make swords with fearsome cutting edges. The reputation of these swords speaks volumes about the sharpness of Tamahagane knives!

The blade of this nakiri knife measures 18cm: rectangular and straight, this blade enables you to work your fruit and vegetables more easily, without the need to learn a particular cutting movement (there is, for example, a particular movement for the chef's knife).

The core of the blade is made of VG5 steel. VG5 contains around 0.7% to 0.8% carbon, giving it a hardness of 59 HRC on the Rockwell scale. This hardness means you'll need to sharpen the blade less frequently, as the wire will wear less quickly than that of a standard steel blade. Cutting quality is also vastly superior, andthe unrivalled sharpness of this knife will give you enormous pleasure in the kitchen. The properties of VG5 and VG10 are very similar, but VG5 is slightly more resistant to corrosion. To maintain a high level of sharpness, you'll need to choose a suitable Japanese stone, preferably double-sided. A softer steel wraps around the core, balancing hardness and flexibility.

When using this nakiri, you'll notice that the hammering is not just a decorative touch. In fact, the small hollows are similar to honeycombs: when cutting your vegetables, they will be less likely to stick to the blade.
