An elegant oak handle
This ko-deba knife features an oak wood handle. This is a durable and robust wood, known for its resistance to humidity, temperature variations and shocks. The oak has a beautiful golden hue that contrasts elegantly with the stainless steel blade.
The knife handle is carved in a typical Japanese octagonal shape. This shape adapts perfectly to your palm, ensuring comfort and maneuverability. These features are highly appreciated, especially during long kitchen sessions.
Wood pulp completes the handle where the blade fits into it, ensuring a totally watertight seal. This prevents any infiltration of water when cleaning or food when cutting.
An efficient blade in AUS-8 steel
The artisanal Japanese knife features a blade made of AUS-8 Japanese stainless steel, a steel enriched with carbon and tungsten, elements that give it greater rigidity and a sharper edge. Reaching a hardness of 59 HRC on the Rockwell scale, it guarantees long-lasting edge performance. The alloy also contains molybdenum and vanadium: molybdenum enhances corrosion resistance, protecting the blade against moisture, while vanadium improves elasticity, making it less brittle.
The hardness of AUS-8 steel means you can enjoy a blade that is easy to sharpen with a stone when necessary. It is important to note that the asymmetrical cutting edge of the blade will require sharpening on one side only. This type of cutting edge is also suitable for right-handed cooks, guaranteeing clean, easy cuts.
Finally, the blade features engraved kanji and has been carefully polished. Its timeless appearance is enhanced by a touch ofauthenticity.
How do I clean my Japanese kitchen knife?
Your knife should be washed exclusively by hand with a non-abrasive sponge and a suitable soap, without wetting the handle. After washing, dry it immediately and carefully to remove all traces of water, then place it in a dry place. Do not put in the dishwasher or soak in the sink.
