The blade is made of VG10 steel. This is a top-of-the-range Japanese alloy renowned worldwide for its cutting quality and long-lasting sharpness. It contains carbon and cobalt, giving it a hardness of 60 HRC. Thanks to such hardness, your sharpening sessions are spaced out!
The blade is damascened, with 33 layers of soft and hard steel surrounding the VG10 blade core, just as Japanese swords were forged in the past. This technique consolidates the blade, giving it suppleness and making it less brittle in use. Although damascus has technical advantages, it also adds a touch of aestheticism to the knife! The damascus on Un-Ryu knives features a mist-like pattern.
The handle is made of reinforced laminated wood, with several resin-impregnated layers for added strength. The handle has a protective lacquer coating and has been polished for a more pleasant feel. The light hue of the handle is a traditional Japanese color! Finally, the handle is completed with 3 rivets for greater reinforcement. The steel bolster is the link between handle and blade, balancing the knife.
Shimomura Un-Ryu knives are hand-sharpened on a water stone by a craftsman. You'll feel their effectiveness from the very first use!
We recommend cleaning by hand, under lukewarm water with a neutral soap, wetting the handle as little as possible, as wood does not like to be dampened. Then simply wipe dry with a soft cloth and store in a dry place, making sure there are no further traces of moisture. Careful maintenance after each use will ensure that your knife retains its original appearance for a long time to come.
