Description

This 12.5cm santoku knife is a versatile Japanese-style model. It is the Japanese equivalent of the chef's knife. This small-sized model enables you to perform a wide range of tasks, but only on small pieces. You can chisel your herbs, cut your fruit and vegetables, your meat... Its timeless style goes with all kitchens.

The blade features a core of VG10 steel, a quality alloy renowned in the cutlery world. Its specific composition (1% carbon, 15% chromium, 1% molybdenum, 0.2% vanadium and 1.5% cobalt) makes it robust and sharp. It achieves a hardness of 60HRC on the Rockwell scale. This core is then surrounded by 36 layers of hard and soft steel, alternating on top (i.e. 18 layers on each side + the core): this is the damascening process. This goldsmithing technique is used to give the blade just the right amount of strength and flexibility, and the Japanese are masters of the art.

Finally, this knife is hammered on its upper surface, creating a beautiful harmony with the damask layer below. The micro-alveoli created by the hammering allow you to cut your food more effectively, with less food sticking to the surface of the steel.

The handle contributes to the overall harmony of the knife. Made from canvas micarta, you'll be able to use it for years without it moving. Composed of 40% resin and 60% linen, this composite material is durable and resistant to temperature variations. It can withstand heat of up to 150°C!

It is also highly resistant to humidity. Because of this capacity, micarta will not shrink, preventing any gaps from forming between the blade and micarta. What's more, this special material has been approved by the American FDA (Food and Drug Administration) for use in professional kitchens. Last but not least, it comes complete with 2 retaining rivets.

To care for it, wash it gently by hand and dry it immediately afterwards to preserve its beauty (no dishwasher).

Like a razor blade, it cuts in on its own, without forcing. Its short blade improves slicing speed. Excellent grip. An exceptional tool for the job!

Yaxell is one of the few manufacturers to offer a 12cm Santoku, a format that I find very practical for delicate work on boards (chopping small quantities of herbs, for example). Reduced dimensions, therefore, and contained weight, are advantages that add to the precision offered by the tall, thin blade. As for the product itself, it's well finished, the blade is very sharp, which is normal for VG-10, but it's not enough to offer hard steel, it has to be well worked, and this is the case here. The damascus and hammered finish are visually pleasing, but whether you like it or not is a matter of taste. The handle is relatively compact, fits well in the hand and doesn't slip when wet. My only complaint concerns the heel, whose edges are not blunt, which can become unpleasant if you hold the blade very far forward. However, this is quite common in this price range. If budget allows, the range above(RAN) offers a slightly more sophisticated finish, with a richer damascus but without hammering. Then there are the GOU and SUPERGOU ranges, which are even more polished (even luxurious), but the price soars. All in all, this Santoku ZEN is a well-positioned item in terms of price, which I highly recommend.
