Zwilling Pro German kitchen knives have been designed to meet the needs of chefs and home cooks alike. These knives are ergonomic, high-performance and visual!
This 13cm Universal knife is recommended for precision cutting of medium-sized fruit and vegetables. What's more, its cutting surface has been slightly serrated, to enable it to cut delicate foods such as tomatoes. Because of their hard skin and soft flesh, tomatoes are difficult to cut (and can often crush when you try to force them). The serrated blade gets the job done!
Designed in stainless steel, it has been enriched with carbon and chromium: the concentration of these two elements further enhances the knife's corrosion resistance and strength.
In fact, its hardness is between 56/58 HRC, so the edge remains sharp, but the steel is easy to maintain, for example with a Sharpening steel, a quick and effective solution.
What's more, the blade has been forged using Zwilling 's proprietary SIGMAFORGE process: the blade is formed on a single piece of steel, which avoids welding or sticking points, and increases the knife's strength and balance.
Heat treatment of the blade is based on FRIODUR tempering. This consists of placing the steel in ice, directly after heating, to instantly lower its temperature. This further increases the steel's strength and hardness, for an impeccable finish. This technique also perfects the cutting edge, giving it a slight suppleness that makes it easy to use (this does not mean that the knife is flexible).
Sharpening is carried out in Profil V-Edge (i.e. with a "V" shape), at 15° on each side of the blade. The cutting edge is sharp, and rivals even some Japanese knives!
The slightly curved bolster is soft and pleasant in the hand (a brand innovation, adding a design touch!).
The handle is made of black synthetic material, with 3 rivets securing the full tang blade inside. Optimum comfort for left- and right-handed users alike!
Beyond its performance, this series of knives is also recognizable by its sleek style, developed by Italian designer Matteo Thun: a design that is of course at the service of ergonomics, but it undeniably adds cachet to these knives... It's a perfect blend of classic and modern.
