This Zwilling Pro20cm chef knife is a must-have for every cook. It's a multifunctional knife that can chop, slice or chisel a wide range of foodstuffs, including meats, fruit and vegetables, and fresh herbs. Its thick 2.3mm blade means you'll be at ease when slicing large items.
What's more, the Zwilling Pro range has been designed to be as ergonomic as it is high-performance, so use in a professional environment is highly recommended.
The blade is made of stainless steel, an alloy developed by Zwilling. The alloy was designed to be enriched with carbon and chromium. The higher concentration of these two elements increases the knife's resistance to corrosion and its strength (strong points for a long-lasting blade).
This alloy gives the knife a Rockwell hardness of around 56/58 HRC: the cutting edge not only stands the test of time, but is also easy to maintain (with a Sharpening steel, for example, in just a few quick strokes).
In addition, the blade has been forged using Zwilling's own SIGMAFORGE process: the blade is formed from a single piece of steel, avoiding the need for too many welding points to assemble the various parts of the knife, and thus increasing the solidity and balance of this piece of cutlery.
Heat treatment of the blade is based on FRIODUR tempering. This process, developed by Zwilling, consists of immersing the steel in ice to bring down its temperature rapidly. The aim is to further increase the steel's strength and hardness. FRIODUR tempering also enhances the knife's edge, giving it a little extra flexibility when cutting.
Sharpening is carried out in Profil V-Edge (with a "V" shape), at 15° on each side of the blade (cumulative 30°). The sharp cutting edge rivals that of some Japanese knives! In this way, food fibers are not broken, they are sliced cleanly, and taste is preserved.
The slightly curved bolster forms the link between the blade and the handle. It's soft and pleasant, and gives your fingers a firm grip to prevent them from slipping on the blade.
The handle is made of black synthetic material, with 3 rivets securing the full tang blade inside. Comfort is optimal for both left- and right-handed users.
Beyond its unmistakable performance, this knife series is also notable for its style, developed by Italian designer Matteo Thun. The uncluttered appearance highlights a totally timeless design, which can suit the most difficult of cooks!
To care for your kitchen knife, wash by hand and dry immediately with a soft cloth to preserve its original appearance.
