This Zwilling Pro26cm chef knife will quickly become a considerable asset in your kitchen.
This multi-functional knife can chop, mince or shred meat, fish, fruit and vegetables, herbs and more. It can be used in all your recipes. Its long 26cm blade is ideal for large-scale foods, for cutting in a single movement.
The Zwilling Pro series has been designed to be as functional as it is efficient, for everyday professional use.
The blade is made of stainless steel, an alloy developed by Zwilling to be enriched with carbon and chromium. These two elements have a direct impact on the knife's corrosion resistance and strength. Rockwell hardness is around 56/58 HRC: the cutting edge not only performs well over time, but is also easy to maintain (a good Sharpening steel will do the trick).
The blade has been forged using Zwilling 's SIGMAFORGE process: it is formed on a single piece of steel, which avoids too many sticking points, thus increasing the knife's strength and balance.
FRIODUR hardening is a process developed by Zwilling. It involves immersing the steel in ice to bring its temperature down rapidly. The aim of this heat treatment is to increase the steel's strength and hardness, already enhanced by the type of alloy used. It also perfects the knife's edge, giving it a little extra flexibility when cutting.
Profil V-Edge ("V" shape) sharpening is at 15° on each side of the blade (a total of 30°). The edge of the blade is pronounced, rivalling even some Japanese knives! As a result, food fibers are not broken or damaged: they are sliced cleanly, for a taste that is respected.
The slightly curved bolster forms the link between the blade and the handle. It's soft and pleasant to the touch, and gives your fingers a firm grip to prevent them from slipping on the blade. The handle, meanwhile, is made of black synthetic material, with 3 rivets securing the full tang blade at its center. Optimum comfort and ambidextrous use.
Beyond its performance, this series of knives is also recognizable by its refined style, conceived by Italian designer Matteo Thun. Its simple, sober appearance ensures a timeless style that is much appreciated.
To care for your Zwilling knife, wash by hand and dry immediately with a soft cloth.
