This 14cm Zwilling Pro boning knife is an asset for your meat processing. Its thin, narrow blade is ideal for skirting bones and removing meat from their surfaces, to avoid waste! Its standard size makes it ideal for medium-sized cuts.
The blade is forged using Zwilling's SIGMAFORGE process. It is forged from a single piece of steel, for greater strength (as there are no gluing points to assemble the various parts of the knife). The alloy used for this is stainless, and enriched with carbon and chromium: this higher concentration increases the knife's strength and resistance to corrosion (these are 2 key elements).
In fact, its final hardness is between 56/58 HRC, but the steel is still easy to maintain, for example with a sharpening steel. A few passes over it and you're done.
Heat treatment of the blade is based on the brand's own FRIODUR method: the steel is immersed in ice to bring down its temperature rapidly. This method not only increases the steel's strength and hardness, but also perfects the cutting edge, giving it a slight suppleness that makes it easy to use (the knife is not overly rigid).
The sharpening on this knife is in Profil V-Edge (i.e. with a "V" shape), at 15° on each side of the blade. The cutting edge is really sharp, and rivals even some Japanese knives (since the angle of a Western knife is usually around 34°).
The rounded, delicate bolster links up with the black synthetic handle. It is completed by 3 stainless steel rivets that secure the full tang blade inside. Optimum comfort for left- and right-handed users alike!
Beyond its performance, this knife series is also recognizable by its clean, sober design. It was created by Northern Italian designer Matteo Thun. The aim is to create a timeless range that will stay with you for years to come.
To care for your knife, we recommend hand-washing it and drying it immediately with a soft cloth, to maintain its appearance and performance.
