This Zwilling Pro 18cmFileting knife is ideal for filleting your favorite fish. Its flexible, thin, narrow blade inserts easily under delicate flesh, to avoid damaging the product and preserve its taste and presentation.
This knife features a blade forged using Zwilling's SIGMAFORGE method. The knife is formed from a single piece of steel, for greater strength of the piece (as there are no gluing points to assemble the various parts of the knife).
The alloy used for this is stainless, and enriched with carbon and chromium: this higher concentration increases the knife's strength and resistance to corrosion.
The knife's hardness is 56/58 HRC on the Rockwell scale. This is a good compromise between strength and edge retention, and the steel is easy to maintain, for example with a Sharpening steel.
Heat treatment of the blade is based on the brand's own FRIODUR process: the steel is immersed in ice to bring down its temperature very quickly after heating. This method not only increases the steel's strength and hardness, but also perfects the cutting edge, giving it a slight suppleness that makes it easy to use (the knife is not overly rigid).
For an impeccable finish, this knife is sharpened using the V-Edge profile (i.e. with a "V" shape), at 15° on each side of the blade.
The delicate, rounded Bolster links with the black synthetic handle. It is completed by 3 stainless steel rivets that secure the full tang blade inside. Optimum comfort for left- and right-handed users alike!
This series of knives is also recognizable by its sleek design. It was developed by Northern Italian designer Matteo Thun. The aim is to create a timeless series that will stay with you for years to come.
To care for your knife, we recommend hand-washing it and drying it immediately with a soft cloth, to maintain its appearance and performance.
