The blade of the Wüsthof Ikon bird's beak knife is forged from a single piece of steel. This operation requires great skill on the part of the Wüsthof experts to ensure that the knife's blade is robust. Thanks to forging, the blade is called full tang because it measures the entire length of the knife. You can have complete confidence in your Ikon santoku knife. The steel chosen by Wüsthof is alloy X50CrMoV15. This alloy contains around 15% chromium and 0.5% carbon, ensuring long life and resistance to corrosion and impact. With a laser-controlled razor edge, the final polishing of each blade is done by hand to guarantee a perfect blade. The handle of the Wüsthof Ikon knife is made from African grenadilla wood, a rare and luxurious species whose exploitation is regulated. Sustainably harvested and extremely robust, African grenadilla is also highly resistant to damp conditions. With its elegant black hue and lighter grain, grenadilla gives your Ikon steak knives a high-end look. Like all woods, grenadilla is a living material, which means that each knife is unique and may differ from the images shown. Three stainless steel rivets press the handle against the knives' full tang blade for ideal stability and absolute control of your knives. The oval shape of the Ikon knives' handles offers ergonomics and long-lasting comfort. You can use the knives for long hours without tiring. A double stainless steel bolster distributes the weight evenly across the slicing knife: its balance is perfect.
