This Miyabi rocking santoku knife is made in Japan, a country renowned for its immense expertise in cutlery. As a result, it'll give you incredible sharpness and the pleasure of cooking every day!
The blade measures 18cm and has a core enriched with MC63 microcarbides, giving it incredible strength! What's more, the CRYODUR hardening process enhances the steel's already considerable hardness. This process involves cooling the blade intensely, down to -196°C. As a result, it reaches a hardness of around 63 HRC on the Rockwell scale (a conventional blade would reach 56/58 HRC).
What's more, the blade is surrounded by 101 layers of damascus steel. This requires a special design, making it even more resistant to corrosion, since damascus is stainless. Damascus is a mixture of soft and hard steel in layers, which are then welded together. It is this technique that creates the highly original waves on the blade.
The blade also features a typically Japanese profile: it has been designed with a 19° cutting edge, perfect for cutting all everyday foods.
The handle of this knife is also original and ultra-design: made of birch wood with a stainless steel base, it ensures comfort in everyday use. Birch wood is known for its lightness, and the "D" shape of the handle adapts to the shape of your hand. All your cuts will be perfectly controlled!
Last but not least, the refined, authentic style of this knife will appeal to all lovers of fine blades and Japanese knives. The beauty of the damascus, the red edging and the light birch handle topped by a rivet with a mosaic logo, all these details attest to the knife's authenticity and place it at the top of the high-end knife rankings.
