This professional sponge knife is part of the Colour Prof range from Arcos. It features a 30cm-long, semi-flexible serrated blade in NITRUM®stainless steel. This special alloy developed by the manufacturer is enriched with nitrogen to increase the blade's resistance to corrosion.
The blade also benefits from ICE PLUS treatment, which consists of cold quenching (-80°) the steel after the original hot heat treatment. This gives the blade a higher hardness, in this case 57 HRC on the Rockwell scale. This is a very good compromise between edge retention and ease of sharpening.
The handle, meanwhile, is made of robust polypropylene overmolded with non-slip rubber, providing the comfort needed for extended work. Each Colour Prof knife comes with a set of 6 coloured discs to clip onto the end of the handle to differentiate the knives according to your needs. In fact, you can assign a color to a function, to avoid cross-contamination (between meat, fish...).
What's more, the plastic of the handle has been given a special antibacterial treatment called Bactiproof® (silver-based): its effectiveness rate against the proliferation of bacteria is 99.9%.
It is also resistant to temperature variations. So you can equip yourself with Arcos Colour Prof knives, which meet NSF standards to guarantee safe use!
With models dating back to 1745, Arcos is an international benchmark in cutlery. The knives are designed in Albacete, Spain, and are the fruit of a blend of traditional know-how and innovative technologies.
