This20-cm Wusaki Hikari SLDsujihiki kiritsuke knife embodies Japanese craftsmanship in all its finesse!
Handcrafted in Japan, it combines a slender profile with a distinctive kiritsuke tip, designed to enhance precision during cutting. Its long, thin blade is perfectly suited for clean, steady strokes, whether you’re slicing a piece of meat, filleting, or making delicate cuts.
A high-performance blade
The 20-cm blade features a San Mai structure, consisting of three layers of steel stacked on top of one another. The core is made of SLD steel enriched with 1.6% carbon, a Japanese alloy renowned for its performance in cutlery. Originally designed for demanding industrial applications, it now offers an excellent balance between edge retention and ease of sharpening.
With a hardness of approximately 63 HRC, this kitchen knife maintains an effective edge over time, reducing the frequency of sharpening. The carbon content enhances the edge’s rigidity, enabling clean, consistent cuts. Its homogeneous microstructure helps reinforce resistance to wear and impact.
SLD also contains chromium (approximately 13%), which improves its corrosion resistance. However, it is still considered a hybrid steel, requiring careful maintenance. The outer layers of softer steel protect the core while adding flexibility to the blade as a whole, which improves impact resistance.
The blade’s surface features a mirror-polished finish, and the engraved kanji characters complete the look. The kiritsuke tip provides additional control, making it ideal for precise cuts and clean finishes.
An elegant handle
The handle is made of bubinga wood, a dense African hardwood prized for its durability and deep grain with warm tones. This wood is highly resistant to moisture and temperature fluctuations, making it an excellent choice for everyday use in the kitchen.
Its octagonal shape provides a natural grip, suitable for both right- and left-handed users. This design enhances control during long cuts, ensuring a secure hold in the palm.
The wood feels pleasant to the touch, offering an authentic sensation with every use. The balance between the blade and the handle facilitates precise movements, even during extended use.
