The Fukito Desert Damascus 13cm Universal knife is a versatile knife for cutting fruit, vegetables and meat (boneless, small pieces). It's easy to handle (due to its size) and pleasant to use over time. It will quickly find its place in your cutting equipment. Its pointed shape gives it an original look.
Its damascened blade is a blend of stainless steel and nickel steel (which is why you can see different colors on the blade).
Damascus balances the structure of the alloy, as the different layers of steel are complementary, giving the blade a good ratio between hardness and suppleness (we don't mean suppleness in the literal sense, but we do mean that the knife is better able to absorb micro-shocks). Damascus is also a real visual asset, creating a superb effect across the entire cutting surface.
At the heart of this damascus is 10Cr15CoMoV stainless steel, which is very similar to VG10 steel. Like VG10, it has a high chromium and carbon content, which enhances its capabilities. Chromium, at 15.5%, increases the alloy's resistance to corrosion, while carbon, at 1.05%, makes the alloy stiffer (60 HRC), so it can be sharpened more thoroughly and hold its edge longer.
This core is then surrounded by stainless steel and nickel steel, giving it contrast.
Note that the blade logo becomes more or less visible depending on angle and light.
As for the handle, it's made of two materials. In fact, it blends G10 and wood, and gold edging adds an attractive finish.
The central part of the handle is made of ironwood from the Arizona desert. It is naturally dark in color, but has lighter veins to give it relief. As wood is a living material, no two handles will be the same! It's a dense wood, and as its name suggests, very hard (a reference to iron).
G10 is a synthetic material renowned for its durability and hardness. It's composed of tempered fiberglass and resin: the whole is compressed and hardened after firing. G10 has the advantage of being durable, resistant and lightweight. It forms the black part visible on the handle, serving as bolster and base.
Finally, the handle is octagonal in shape for ambidextrous use. In addition to having 8 different angles, the octagon that represents its handle is full-length, with an unusual streamlined effect.
For effective, long-lasting maintenance, the knife should be washed by hand, without soaking it in the sink or putting it in the dishwasher. Once you've washed it, wipe it dry with a soft cloth, then put it away.
Your knife comes with a magnetic case.
To find out a little more, Fukito knives are developed in Western China, in the province of Guangdong. For decades, this area has been historically linked to knife production. Each Fukito knife is designed using materials and processes that meet the manufacturing standards of French professionals in the food industry.
