The blade is made of German X50CrMoV15 stainless steel, an alloy widely used in the professional sector. Its 15% chromium content makes it highly resistant to corrosion: a real asset in the kitchen! Then there's the fact that all its constituent elements are balanced: its vanadium content balances out its carbon content to add "flexibility" and make it less brittle. Finally, we can mention the durability of its cutting edge and its ease of sharpening with its excellent quality/price ratio.
This blade also benefits from vacuum heat treatment, because unlike standard heat treatment, it takes place in a protected atmosphere, free of all elements, to ensure that the blade is treated to its fullest potential. This process is therefore much more advantageous, as during standard heat treatment, certain elements present in the air can react with the metal, even during hardening.
What's more, the blade has an attractive satin finish. The stainless steel bolster links the blade to the handle. Its gently sloping surface makes for a pleasant, natural grip on the handle.
The handle is made of dark ebony. This wood is often considered precious and offers excellent resistance to intense use and humidity. Polished, it offers a softer, more pleasant feel. Each handle is unique, as wood is a living material. You won't find the same nuances and veins from one piece to another.
The handle is joined to the blade by 3 rivets that hold the knife together. The central rivet represents a mosaic motif, its copper color contrasting perfectly with the color of the ebony.
The handle is complemented by a stainless steel cap at the end, providing an additional finish while balancing the weight of the knife. Suitable for right- and left-handed use!
How to care for the knife? We recommend hand-washing with a sponge and mild detergent. As soon as the knife is clean, wipe it immediately with a cloth to remove all traces of moisture, then store it. Dishwashing and soaking in the sink are not recommended.
