Description

The kiritsuke is a versatile knife for everyday use! Like a chef' s knife, you can easily chop herbs, mince meat or slice vegetables. Its kiritsuke tip makes cutting even more precise! Be careful not to use it on hard foods such as squash, bones or frozen foods.

A damask knife with a 10CR blade

The blade of this Fukito knife features an optimal damascus construction. This technique consists of forging a rigid steel core which is then covered with several layers of softer steel. This protects the core of your blade while balancing hardness for greater strength.

The core of your blade is made from 10CR steel. This steel has a high carbon content of around 1%, the element that increases the hardness of your blade. As a result, it boasts a hardness of 60HRC on the Rockwell scale: your cutting edge is long-lasting and high-performance!

Next, 66 layers of softer stainless steel are added around the core to create the damascus. They add suppleness to your blade (without making it flexible) so that it's less brittle in use. Damascus also adds a highly aesthetic visual touch, as you can observe the superimposition of different layers of steel all along the cutting edge. They form fine waves with random patterns that are unique to each Fukito knife!

Your damascus knife also features a rough forged finish for an added touch of authenticity. This finish is much appreciated by chefs for its rustic, traditional feel.

Finally, the surface of your kiritsuke knife has been hammered to give it character. Hammering also has a practical function, as it prevents your food from sticking to the sides of your knife when cutting.

A sturdy wooden handle for this Fukito knife

The handle of this kitchen knife is made of ebony wood, an exotic species renowned for its strength and durability. Thanks to its high density, this wood is resistant to humidity and deformation. It has a dark color with a unique grain on each knife.

To complete the handle, a stainless steel bolster and base have been added to improve the balance of your hammered knife. These two elements are joined to the wood by gold edging for added elegance. The handle also features a mosaic rivet for added reliability and a touch of originality.

With its hexagonal shape, this damascus steel knife is suitable for all cooks, whether left- or right-handed! It offers an ergonomic grip for optimum ease of use, particularly when used for long periods in the kitchen.

For ideal protection, this knife comes in a box! This also makes it an excellent gift idea.

Fukito knives are made in the Guangdong province of Western China. This is a place that has been historically linked to knife production for many decades.

To care for your damask knife, it's important to wash it only by hand with a non-abrasive sponge, avoiding wetting the handle. Once cleaned, it should be dried to remove all moisture and stored in a dry place. Do not put it in the dishwasher or leave it to soak in the sink.
