A powerful, elegant damascened blade
This 21cm Sakai Takayuki Grand Chef Seigaiha Japanese chef knife is the essential knife for all cooking enthusiasts. Made in Seki, the historic city of Japanese cutlery, it combines high-quality materials, cutting engineering and traditional design.
It features a damascened blade with the traditional Seigaiha pattern. This ancestral design appeared in the 6th century to represent the seas and oceans on Japanese nautical charts. "Seigaiha" literally translates as "blue sea and waves", and symbolizes peace, strength and continuity. The wave pattern on the blade is a contemporary interpretation of the waves on the high seas, giving each knife a unique and meaningful character.
A high-performance knife for all your ingredients
This Grand Chef Seigaiha chef's knife has a 21cm blade, an ideal size for a versatile kitchen knife: it enables you to slice, chop or chisel all types of food (meat, fish, vegetables, herbs).
The blade contains a core of Swedish Böhler stainless steel. The alloy is renowned for its purity, strength and resistance to corrosion. 44 layers of stainless steel cover the core, forming a 45-layer damascus that is as elegant as it is protective.
Theflat grinding enhances cutting finesse, and the Rockwell hardness of around 60 HRC ensures excellent edge retention over time. Mirror polishing applied to the blade further enhances the Seigaiha pattern, while creating a smooth surface that improves its glide over food.
A hybrid handle for a perfect grip
The handle of this knife measures 11cm and is made of black Pakka wood, a high-quality composite material of heat-compressed wood and resin. Pakkawood is moisture-resistant, durable and pleasant to the touch.
The shape of the handle is hybrid. Near the bolster, it is oval in the Western style, for an ergonomic, fluid grip. Towards the heel, it becomes octagonal in Japanese style, ensuring a firm, precise grip. This design is suitable for both right-handed and left-handed users.
The knife handle is complemented by a stainless steel bolster and heel, ensuring strength, balance and elegance. It enables prolonged, fatigue-free use, even for long or intensive cutting.
