The MAC factory is located in Seki, the capital of Japanese cutlery for centuries. The brand was born in the 1960s. Its founder worked part-time as a chef in the United States, supplementing his studies. It was there that he had the opportunity to test kitchen knives that were not necessarily to his taste.
It was when he broke the tip of a knife that he had the idea of setting up his own business: one day, he was using a dull, heavy and very sharp German knife, which he dropped on the floor. The point had broken off, and he repaired it with a whetstone, making the point "rounder". Little by little, he realized that this modification had significantly increased the knife's effectiveness!
When he returned to his homeland, he decided to create his own brand of sharp, durable, lighter and safer knives, perfectly suited to professional chefs.
The name MAC comes from the word "Macrocosm", which in simplified terms means "immense universe" (reflecting the founder's ambition to equip every country in the world with his knives). He chose to retain the first 3 letters of the word.
Set composition:
- 1 20cm chef's knife with honeycomb blade: The all-purpose knife, a kitchen essential for cutting vegetables, fruit, herbs, meat and fish.
- 1 13cm all-purpose knife with honeycomb blade: A versatile knife for more precise cuts, such as small fruits and vegetables.
Focus on the CHEF range:
MAC usesAUS-8 steel for its blades, a Japanese stainless steel enriched with carbon, tungsten, molybdenum and vanadium. These combined elements have an impact on the blade's hardness, corrosion resistance and elasticity. As a result, the blade is rigid enough to hold an edge for a long time, it is not affected by humidity, and its impact resistance is excellent. These 3 advantages are the criteria most sought-after by professional chefs. The blades of these knives are honeycombed, which creates small air bubbles between the blade and the food being cut, preventing food from sticking.
Its formidable cutting edge is due to its particular shape, which is somewhere between a Japanese angle (i.e. unilateral) and a Western angle (i.e. bilateral). You don't have to strain to slice food, which reduces fatigue over the long term. The brand is renowned the world over, and now has several patents to its credit.
MAC knives are hand-sharpened on a water stone. The skills of the craftsman in question ensure a razor-sharp edge.
The handle is made of Pakkawood, a composite material of resin and hot-compressed laminated wood. The handle offers excellent resistance to humidity and temperature variations. Visually, it features veins reminiscent of wood, without its drawbacks (notably porosity). 3 rivets enclose the tang in the handle.
The knives are rather light and pleasant to handle over time. Their ergonomic shape makes them easy to grip, and the slightly bent base of the knife allows you to place your little finger firmly on the blade.
Care instructions:
We recommend washing your knives by hand in lukewarm water with a little washing-up liquid and a soft sponge. Then wipe the blades with a soft cloth to avoid any traces of moisture.
