Knives in the set :
- 1 paring knife 12.5cm: ideal for peeling or cutting small fruits and vegetables
- 1 chef's knife 20cm: for chopping, mincing or chiseling meats, vegetables or fresh herbs. This model is considered the best current kitchen knife, according to a study by the American website Wirecutter, picked up by the newspaper Le Monde in November 2018. Among other things, it was after 120 hours of research and numerous discussions with chefs and experts in the field that the knife was voted the big winner of this test. Its incredible edge holds up over the long term and is easily maintained when the need arises. It's also very comfortable in the hand, to ease your movements and reduce fatigue over the long term. The perfect knife for chefs!
- 1 chef's knife 24cm: like the other model, this is a multi-purpose knife, but its long blade makes it ideal for larger pieces.
With this set, you can tackle a wide range of cutting tasks, so you can vary your recipes and enjoy your time in the kitchen.
Blade :
The steel of these MAC Professional knives holds up over the long term while offering impeccable cutting performance.
Made from AUS-8 stainless steel, the blade of each of these knives is enriched with carbon, tungsten, molybdenum and vanadium. Carbon and tungsten are 2 important elements in the blade's rigidity. The more carbon there is, the more rigid it is, and a rigid blade will hold its cutting edge for a long time. What's more, you can work the edge more thoroughly, to make it razor-sharp.
Molybdenum and vanadium also have a slight impact on rigidity. Vanadium increases the alloy's elasticity and thus its resistance to impact, while molybdenum increases its resistance to oxidation.
This alloy remains easy to work, so you can easily maintain it with a whetstone.
These knives also feature a hybrid cutting edge, combining a Japanese angle (unilateral) and a Western angle (symmetrical). This unique angle gives the knives the perfect combination of formidable cutting edge and longevity.
Final sharpening is carried out by hand, on a water stone. The craftsman's skill ensures a razor-sharp edge right from the first use.
Handle:
The handle is made of 2 plates of Pakkawood, a composite material combining laminated wood and resin compressed under heat. The end result is resistant to moisture, impact and temperature variations. Rivets hold the Pakkawood to the full tang blade. A steel bolster links the blade to the handle. Last but not least, the shape of the knives is designed to ensure a perfect grip.
Care and maintenance :
To care for your knives, wash them by hand in lukewarm water with a soft sponge. Dry immediately with a soft cloth, leaving no trace of moisture on the surface. In this way, you'll preserve their performance and original appearance for a long time to come.
MAC in a few words:
MAC is a Japanese knife manufacturer based in Seki, a Japanese town renowned for its quality cutlery production since the Middle Ages.
The brand was created in the 60s, after its founder had studied in the USA, where he worked as a part-time cook to supplement his studies.
It was there that he had the opportunity to test kitchen knives that weren't necessarily to his taste. As an anecdote, he was using a heavy, very sharp, blunt German knife when he dropped it on the floor, narrowly missing stabbing himself in the foot. Instead, the knife stuck in the ground, and when he tried to remove it, about 3cm of the point had broken off. To fix this, he took a sharpening stone to the blade, making the point "rounder". Gradually, he realized that this modification had significantly increased the knife's efficiency, and with it his own output.
When he returned to his homeland, this experience inspired him to found the MAC company, with the aim of producing knives with a formidable cutting edge that would be safer, longer-lasting and easier to use. The brand now boasts several patents to its credit, and is known the world over. For the record, the name MAC comes from the word "Macrocosm", which in simplified terms means "immense universe" (reflecting the founder's ambition to equip every country in the world with his knives). He chose to retain the first 3 letters of the word.
