Make fast, precise cuts with this Kai Michel Bras quotidien n°3Universal knife!
The Michel Bras Quotidien knife series comprises 3 models which, as their name suggests, are perfect for everyday use.
Chef Michel Bras is famous for his "creative" cuisine at his three-starred restaurant in Laguiole, and his popularity extends as far as Japan, where he also runs another restaurant. The collaboration between Kai and Michel Bras was a natural consequence of the desire to offer high-performance, durable and aesthetically pleasing knives and Utensils for both professional and private use.
This Quotidien n°3 (L) Universal knife features a blade made from AUS-8A stainless steel, an alloy with a chromium content of around 14.5% (perfect for resistance to oxidation) and a carbon content of around 0.8% (for excellent blade hardness).
All in all, its strength index reaches 58/59 HRC on the Rockwell scale, a good compromise between edge retention and ease of resharpening. This confirms its suitability for everyday use.
The steel then benefits from a titanium coating, which not only protects it, but also enhances its non-stick properties. The dark appearance of the titanium adds originality to the piece.
For an impeccable finish, you can distinguish the brand name that has been affixed to the cutting surface, as well as the words "Made in Japan", a guarantee of quality. The name of the Michelin-starred chef also appears on the blade as a signature. Also visible on the back of the blade is a cistre leaf (a grass growing on the Aubrac plateaus), the emblem of the chef's cuisine.
The handle is made of Pakkawood, a composite material much appreciated in the kitchen for its longevity and robustness. It is made from laminated wood and resin, all hot-pressed together. The result resembles natural wood in its fine grain. Pakkawood is not only antibacterial, but also resistant to changes in temperature and humidity (it is said to be rot-proof). It is completed by 2 rivets that hold the various parts of the knife together.
Care instructions :
The knife should be washed by hand, then dried and stored in a dry place.
Opt for this Universal knife that's both stylish and high-performance, to help you cut your fruit and vegetables!
