Today, Misono is considered the oldest manufacturer of Western-style knives in Japan, employing some 50 experts to develop 150,000 knives a year. The brand carries out 100% of the manufacture of its knives, from the design of the blade to that of the handle (while it's true that many producers of this size have certain parts of their knives made by other companies, more specialized in certain fields).
Misono started out in 1935, in the town of Seki, internationally renowned for its knifemaking expertise. The company's production techniques rely heavily on those of Japanese master blacksmiths, and many steps are carried out by hand, by their experts. Although the family business initially produced specialized blades for peelers, in the 60s it diversified into the creation of kitchen knives.
Misono knives are now appreciated the world over, and top chefs have no hesitation in equipping themselves with them.
Model:
This Misono 13cmUniversal knife comes from one of the Japanese manufacturer's best ranges: the UX10 series. In fact, it's widely used in the restaurant trade, particularly by gourmet chefs and Michelin-starred chefs! Don't hesitate to equip yourself.
Let's talk about the advantages of a Misono UX10 knife blade:
- First of all, it's made from a high-quality Swedish stainless alloy, which makes it corrosion-resistant over the long term (with standard use and maintenance, of course).
- The knife's cutting edge remains powerful over time. In fact, Misono UX10 Japanese knives have the highest edge retention of all the brand's ranges combined.
- The blade hardness is 59/60 HRC: a good compromise between ease of sharpening and cutting edge life. You can restore its effectiveness by maintaining it with a Sharpening stone whenever you feel it's necessary.
- The shape of the cutting edge: it has an asymmetrical (but not one-sided) angle. This makes for much easier cutting: the blade gently inserts itself into flesh, without damaging it.
- For an impeccable finish: you can distinguish the brand and range logos, which have been affixed to the cutting surface.
The handle is perfectly suited to Western use, thanks to its resistant materials and ergonomic shape (hence its worldwide use). The black parts are made of hand-friendly Pakkawood, for long-lasting, fatigue-free use. Note that Pakkawood is an antibacterial composite material widely used in the kitchen, as it is resistant to temperature variations and humidity.
The hollowed-out shape at the end of the handle allows you to grip and handle it with control and efficiency. Its 3 rivets and bolster are made of nickel silver. This is an alloy combining copper, nickel and zinc, appreciated for its hardness and resistance to oxidation. It is therefore particularly recommended for a kitchen environment.
The appearance of nickel silver is not dissimilar to that of stainless steel, creating a beautiful continuity with the cutting surface. The bolster balances the knife, while the rivets perfectly hold the polymer handle to the full tang blade (which extends to the end of the handle).
Care and maintenance :
Although perfectly suited to professional use, we recommend cleaning by hand with a soft sponge and washing-up liquid. Once you've washed your knife, wipe it dry with a cloth and store it in a dry place, to ensure that its original appearance is maintained over the long term.
