Sabatier Éléphant is a brand of the French cutlery manufacturer Thiers Issard. Based in Thiers since 1884, this artisan cutlery company designs high-quality kitchen knives.
This tomato knife features a 13cm serrated blade in 4116 stainless steel. This stainless steel contains chromium, vanadium and molybdenum, which enable the blade to resist corrosion, wear and deformation. The alloy gives the blade a hardness of 55HRC for easy maintenance. The serrations on the blade cut through foods such as tomatoes and kiwis, which have thin skins and delicate flesh, without damaging them.
This full-silk blade is hand-forged by an artisan. The design is hot-forged, and the blade is then immersed in 2 oil baths (quenching and tempering) which bind the steel molecules together to give the blade great strength. The blade is then sharpened on a grinding wheel equipped with leather rollers that shape the cutting edge.
The knife is fitted with a 10cm handle made of olive wood, a wood with a golden hue and singular veining that makes each knife unique. The Mediterranean-style handle is secured to the blade by 3 brass rivets for added strength.
With its round aluminum Bolster, the knife is well-balanced and pleasantly light in the hand. A slim guard means you can use the knife in complete safety, as your fingers cannot slip over the blade.
We recommend washing your knife by hand, taking care not to run the handle under water. Olive wood does not appreciate contact with water. Drying the knife immediately is ideal for preserving it.
