Description

The Yaxell Ketu Japanesenakiri knife is a top-of-the-range knife that's a must-have in your kitchen!

Yaxell's Ketu series offers a wide range of knives for cutting all types of food. With this nakiri, you can quickly and easily cut vegetables vertically, and chop herbs with ease. The Ketu nakiri has exceptional features.

Blade features

The high blade of this knife is 16.5cm long. Its core is made of SG2 powdered steel, a high-quality alloy. Its high price is explained by its multiple advantages. It contains around 1.3% carbon and 15% chromium, giving it an average hardness of 63 HRC. Such hardness is synonymous with a very long-lasting cutting edge. In fact, you don't need to sharpen your knife with a stone on a regular basis, but it's easy to sharpen whenever you need to. SG2 powdered steel is also renowned for its purity: its microscopic structure is so homogeneous that it is highly resistant.

A softer stainless steel covers the SG2 core on both sides to increase its strength, resulting in a 3-layer damascened San Maï blade. The layers of steel are visible on the cutting surface of the blade.

The upper part of the blade is hammered for added strength, but not only that. The hammering also serves to ensure that the cut food lifts off the blade. Finally, the brand name and Yaxell logo are engraved at the same level as the hammering to give the knife even more authenticity.

Handle features

The handle is connected to the blade by two stainless steel bolsters. The handle is made of Pakkawood, a non-porous blend of laminated wood and resin. Pakka wood is strong, durable and rot-proof. Perfectly suited to kitchen use, it is resistant to humidity and temperature variations. Pakka wood has a sober black color and a slight golden grain.

The curved shape of the handle guarantees a perfect, comfortable grip. A mosaic rivet is inlaid in the center, representing the traditional emblem of the Japanese samurai family.

Finally, the base of the handle features a superb golden engraving of the kanji Ketu. Meaning "spotless" or "pure", it is the perfect symbol for this top-of-the-range nakiri.

Care and maintenance

This top-of-the-range knife requires meticulous care if it is to last. It should be cleaned by hand only, using a non-abrasive sponge and washing-up liquid. Be careful not to run the handle under lukewarm water. Then wipe the knife with a clean cloth before storing it in your Bag, block or sheath. We do not recommend placing the knife on a bar magnet, as the blade is hammered, which could cause the knife to fall and break.
