This 13.5m Shizu Hamono steak knife is part of the superb Series Damascus range. It's both beautiful and powerful, and brings a traditional touch to your table. It is shaped like a small Japanese sword, for an authentic look.
The blade of this Shizu Hamono steak knife is damascened. This means that it is built on a core of superimposed layers of different steels, alternating with each other:
- Its core is made of Japanese stainless steel, VG10. This top-of-the-range alloy enjoys an excellent international reputation for its durability, for example. Among other things, it contains 1% carbon, giving it an excellent hardness of around 60 HRC on the Rockwell scale. Such a core ensures a long-lasting sharp edge (it supports a "razor" finish), and means you can avoid over-sharpening.
- Two softer steels are then placed alternately on top of the VG10 core. They add suppleness to the alloy (without making it flexible) and increase its resistance to corrosion. These complementary layers create a strong, durable alloy, ideal for regular use. The steels alternate in 16 folded layers on either side of the core, for a total of 33 strata when the blade is viewed as a whole (including the core).
The handle is made of dark laminated wood, with unique veins on its surface. Its straight shape rises slightly to the tip of the functional part. Both right- and left-handers can use it, and its polished surface is very pleasant in the hand. You can distinguish the full tang blade at the end of the handle, which extends across the entire piece, for an impeccable finish. The knife is lightweight and pleasant to use, even over extended periods.
The knife should be washed by hand, then wiped with a soft cloth and stored away from moisture. Do not use the dishwasher. It comes in a black cardboard box. You can give it as a gift or treat yourself!
