The model :
This Cerax professional whetstone is first fired at very high temperatures, making it more resistant to the risk of cracking. All in all, it's durable and easy to use, even for beginners.
Its #6000 grit is considered very fine, and is therefore recommended for polishing the cutting edge of your knives to reveal their full cutting capacity.
Please note: the stone's dimensions may vary by a few millimeters, and its weight by a few grams - this is perfectly normal!
How to use your Suehiro stone:
Soak the stone in water for 5 minutes. You can reapply water to its surface during sharpening, when you feel it's necessary. You can do this directly by hand, or with a pipette for even greater precision.
After a few passes of the knife over the stone, you'll notice a small colored sludge forming on the surface of the stone, which is a normal process. This "sludge" is even essential, as it helps to sharpen the knife, so don't clean it off when you sharpen the knife.
After use, you can rinse the surface and clean it with a soft brush. Wipe with a dry cloth, then leave to dry in a room at room temperature (keep out of direct sunlight for faster drying).
Handy accessories:
A small white Nagura stone (approx. 7.2 x 1.7 x 0.9 cm) is available. This is used to create the famous mud that facilitates the stone's action. As we've already said, it reinforces the abrasive power of the main stone, and thus increases its performance.
It's important to note that the #6000 grit stone is glued to a white base, which helps stabilize it during use. It comes with a box that you can of course use for storage, but also as a sharpening stand when in use, or as a small basin for soaking the stone before use!
The box also has a space for the Nagura stone, to prevent it getting lost. Its black feet are also removable.
Suehiro is a Japanese specialist in professional sharpening stones. These are practical and long-lasting, and even novices can enjoy using them (stone sharpening can be impressive if you've never done it before).
Suehiro oversees every stage in the manufacture of the stones it creates, from R&D to the actual production of the products.
Here are the main phases:
- Mixing and stirring ingredients in large vats
- Press each stone into a rectangular shape
- Allow shaped stones to dry for a short time
- Bake to set
- Carry out the final moulding by hand (a craftsman passes the stone over a grinding wheel to ensure a clean finish)
- Quality control before the stones are placed in the packaging
