Description

This whetstone comes from the Cerax range, which features stones fired at very high temperatures, making them more resistant to cracking. They are therefore durable, and also very easy to use.

Its #1000 grit is considered medium, so it is recommended for regular maintenance of your blades, before they lose too much of their sharpness.

Good to know:

The stone should be soaked in water for 5 minutes before use. You can reapply water to the surface of the stone during sharpening, when you feel it's necessary. You can do this directly by hand, or with a pipette for greater precision.

After a few moments' use, you'll notice a small colored sludge forming on the surface of the stone, and this is perfectly normal. This "sludge" is even essential, as it helps to sharpen the knife, so don't clean it during the process.

After use, you can rinse the used surface and clean it with a small, soft brush. Wipe with a dry cloth, then leave to dry in a room at room temperature (keep out of direct sunlight for faster drying).

Please note: the dimensions of the stone may vary by a few millimeters, and its weight by a few grams, but this is perfectly normal.

Complementary accessories:

A small Nagura stone (7.3 x 1.8 x 1 cm) is supplied with the stone. This small, white model is used to create the famous sludge that facilitates the stone's action. As already mentioned, this reinforces the abrasive power of the maxi stone, thus increasing its effectiveness.

A flexible silicone base is also supplied with the pack, enabling you to stabilize the stone during use. It's removable, so you don't have to use it if you prefer to place the stone on a cloth, for example.

A few words about the manufacturer:

Suehiro is a Japanese specialist in professional sharpening stones. It strives to develop practical, long-lasting stones that even novices can enjoy using, as stone sharpening can be impressive if it's never been done before.

Suehiro manages every stage in the manufacture of its stones, from research and development to production. Several phases follow one another:

- Mixing and stirring ingredients in large vats

- Press-molding each stone into a rectangle

- Allow shaped stones to dry for a short time

- Bake to set

- Carry out the final moulding by hand (a craftsman passes the stone over a grinding wheel to ensure a clean finish)

- Quality control before the stones are placed in the packaging

The best 1000-grain stone I've ever tried
language rating 10
Between its very reasonable price, its large dimensions which save a lot of time and precision in the movement, and its exemplary feel, there's no question about it: for me, it's the ideal choice for the 1000. My only regret, if there is one, is that it seems very difficult to find stones of the same dimensions, without a base, at higher grits (e.g. 3000, 8000).
efficient!

just a few passes are enough to see the particles settle on the stone! and with a nagura it's even more obvious! the relationship between the steel and the stone is symbiotic, difficult to describe in words but the sensation of harmony between the two can be felt. the stone that every sharpener should acquire!

Good product

I was surprised to find a stone that was quite large in volume, the product seems to be of very good quality, the grain is still very fine but it's my first experience with a stone of this style. I'm going to have to order another stone with 1g more grain, but I'm still satisfied with the product. Thank you Chef's Knife.

I haven't tried it yet. But according to tests found on the internet m, it must be very good.

I'm very happy with this apparently very versatile stone. Note that, depending on the knife, you may or may not have to run the knife over the stone in one direction or the other ("backwards" or not, as it were, which is not specified for novices).

I'm very happy with this stone, it's big and thick, very stable, sharpens my knives perfectly, and quickly. I have a #4000 King stone to complete the sharpening, and the result is excellent. What's more, the price is not calamitous.
