Choose the Wusaki by Suehiro 3000/8000 Japanese whetstone to sharpen your knives!
The Suehiro brand is renowned in Japan for designing top-of-the-range , professional-quality sharpening stones. This specialist brand offers durable, easy-to-use whetstones for use by professionals and amateurs alike.
The first side of the stone has a fine #3000 grit. This grit is particularly suitable for knife blades with a hardness of over 60 HRC, as it provides a long-lasting cutting edge. It's a versatile face that also enables you to give blades with this same hardness a thorough polish, giving them a razor-sharp edge.
With its very fine #8000 grit on the second side, the stone takes sharpening a step further by refining the edge - the extreme cutting edge of the blade - and marking it so that the knife glides through food when cutting. This precision work is once again suitable for blades with a hardness of 60 HRC or higher.
For trouble-free sharpening, the stone is supplied on a silicone base for maximum stability. If you prefer to place the stone on a wooden stand or tea towel, this is possible, as the stand is removable.
This whetstone is made of Cerax ceramic. Suehiro has developed this top-of-the-range ceramic which has been fired at very high temperatures, preventing it from cracking and giving the stone long durability and ease of use.
The manufacture of whetstones is a very rigorous process at Suehiro. The Japanese brand mixes the ingredients itself, molds the future stones, dries and bakes them, and controls their quality. To offer you a top-quality stone, Wusaki has combined its know-how with that of Suehiro.
Using the stone is relatively simple. Simply soak it in water for 5 to 10 minutes to prepare it. This allows the stone to soak up the water needed for sharpening.
Then use the Nagura stone supplied to make a slurry. It is the essential complement to complete the preparation of the whetstone. The slurry is created by rubbing this small stone against the damp whetstone. This releases the stone's abrasive particles and increases its effectiveness.
Once you've finished sharpening, rinse the stone thoroughly with clean water to remove all abrasive and metallic particles. After cleaning, let the stone dry in the open air at room temperature, without placing it in direct sunlight for storage. This could damage the stone.
