The model :
This Cerax whetstone is first fired at very high temperatures, making it more resistant to the risk of cracking. It's a durable whetstone, and also very easy to use.
Its #1000 grit is considered medium, so it is recommended for the maintenance of knives that are beginning to lose their edge.
Please note: the stone's dimensions may vary by a few millimeters, and its weight by a few grams - this is perfectly normal.
Recommendations for use:
Soak the stone for 5 minutes before use. You can reapply water to the surface of the stone during sharpening, when you feel it's necessary. You can do this directly by hand, or with a pipette if you want greater precision.
After a few moments' use, you'll notice a small colored sludge forming on the surface of the stone - a normal process. This "sludge" is even essential, as it helps to sharpen the knife, so don't clean it off when you sharpen the knife.
After use, you can rinse the surface and clean it with a soft brush. Wipe with a dry cloth, then leave to dry in a room at room temperature (keep out of direct sunlight for faster drying).
To complement the stone :
A small white Nagura stone (7.2 x 1.7 x 0.9 cm) is available. This is used to create the famous mud that facilitates the stone's action. As already mentioned, it reinforces the abrasive power of the main stone, thus enhancing its performance.
It's important to note that the #1000 grit stone is glued to a white base, which helps stabilize it during use. It comes with a box that you can of course use for storage, but also as a sharpening stand when in use, or as a small basin for soaking the stone before use!
The box also has a space for the Nagura stone, to prevent it getting lost. Its black feet are also removable.
A few words about the manufacturer :
Suehiro is a Japanese specialist in professional sharpening stones. These are practical and long-lasting, and novices can even enjoy using them (stone sharpening can be impressive if it's never been done before).
Suehiro oversees every stage in the manufacture of the stones it creates, from R&D to the actual production of the products.
Here are the main phases:
- Mixing and stirring ingredients in large vats
- Press each stone into a rectangular shape
- Allow shaped stones to dry for a short time
- Bake to set
- Carry out the final moulding by hand (a craftsman passes the stone over a grinding wheel to ensure a clean finish)
- Quality control before the stones are placed in the packaging
