This 20cm chef knife is a practical multi-purpose model that can be used for every recipe you prepare. Its standard-shaped blade lets you chop, mince or minced a variety of foods, including meat, vegetables and even fresh herbs. If you had to choose just one knife model to equip yourself with, this would be it.
Here are the features of a Super Gou Ypsilon knife:
Blade:
It has a core of SG2 steel, a special powder with a fine, high-density structure (this enables it to incorporate more mixed particles into its alloy). Once worked, this special steel is extremely rigid, which enhances its cutting qualities (the wire is harder, so the basic sharpening is more thorough). It is also more resistant to humidity than VG10, an already high-performance alloy.
The SG2 core is then protected by 192 superimposed layers of softer steel (96 on each side, for a total of 193 layers including the core in the middle). Thanks to this mix of layers, the knife blade offers the perfect combination of hardness and slight suppleness (making it less brittle), and achieves 63 HRC on the Rockwell scale.
The knife's cutting edge is cut at an angle of 30° (i.e. 15° on each side), whereas the standard angle for a Japanese knife is approximately 34°. With a cutting angle like this, you've got to watch your fingers!
The engraving on the blade is done entirely by hand by a master cutler. He uses a punch to form the Japanese characters, then taps on them with a small hammer. His expertise adds an extra touch of authenticity to the knife.
The knife comes with a protective wooden case to protect the blade.
The handle :
It is made of black micarta with red edging, a material composed of 40% resin and 60% linen. It is resistant to temperature variations. It is also highly resistant to humidity. It has been approved by the US FDA (Food and Drug Administration), making it suitable for professional use. It features a steel base and a single rivet with a mosaic pattern.
The result is a rare elegance.
General :
Care: wash the knife gently by hand, then wipe dry immediately afterwards to protect it from moisture.
Finally, its timeless style will appeal to the most uncompromising of cooks. Every element of the knife rivals in refinement, between the damascus, the polishing, the engraving and the mosaic rivet... you have an exceptional knife!
