The Wusaki Universal knife is extremely versatile! Its blade allows you to make a variety of cuts, especially those requiring great precision. It's perfect for preparing vegetables by peeling, slicing, dicing or brunoising.
The Unagi range of knives is the fruit of the labors of the craftsmen of the Japanese cutlery company Tsunehisa. It embodies authentic Japanese craftsmanship through the use of quality materials and meticulous finishing!
This is a damascened blade, an emblematic feature of Japanese cutlery. This technique involves the creation of a rigid steel core enveloped by several layers of softer steel. These additional layers act as protection for the core of the blade, creating optimal balance. The outer layers add flexibility to the blade, making it less brittle in use.
AUS10 steel has been selected for the core of this blade. This is a high-quality Japanese alloy, considered to be the top of the range in the AUS family. With a carbon content of 1.05%, this element gives the steel increased hardness, ensuring excellent edge retention.
A hardness of 60HRC on the Rockwell scale proves the high performance and longevity of the cutting edge of your Japanese knife.
This alloy also includes nickel, manganese, vanadium and silicon, elements that help balance the blade's hardness to make it less brittle in use. It's a high-quality steel that offers good resistance to wear and corrosion!
Once forged, this core is enveloped in several superimposed layers of steel, enriched with nickel to increase the blade's flexibility. The blade's damascus finish is highly aesthetic, as you can see the superimposed layers of steel forming an original pattern.
This range of Wusaki knives features a unique damascus pattern: the layers of steel unfold in the shape of circles, evoking the image of a drop of water falling on the center of the blade and propagating in harmonious waves.
The handle of your knife is made of oak wood, renowned for its durability and resistance to moisture, shock and vibration, thus preventing warping. It is finished with a light black lacquer to darken its natural shade.
With its octagonal shape, this traditional knife fits comfortably in the hands of all cooks, whether right- or left-handed. Its ergonomic design offers a comfortable grip for optimum maneuverability, even during prolonged use.
To ensure a watertight seal where the blade meets the handle and prevent food or water infiltration, wood paste has been added.
To care for your handcrafted Japanese knife, wash only by hand with a soft sponge, avoiding getting the handle wet. Once cleaned, dry immediately with a clean cloth to remove all traces of moisture and store in a dry place. Do not use the dishwasher, and do not leave your Japanese knife to soak in the sink.
