A knife with an original blade
This paring knife features a damascened blade constructed from several layers of soft steel superimposed around a rigid core. This process achieves an ideal balance to make the blade more supple and less brittle in the event of micro-shocks.
The core of this blade is made of VG10 steel, a high-grade Japanese alloy with numerous advantages. It has a high carbon content of around 1%: this is the element that increases the hardness of a steel, bearing in mind that the higher the hardness, the longer the cutting edge. On the Rockwell scale, the hardness of this blade is 60HRC, which means it performs well over time. So you can space out your sharpening sessions.
Next, this core is surrounded by several alternating layers of steel to create the damascus pattern. The damascus patterns form waves that can be seen on the surface of the blade, are very aesthetic and are unique to each piece! The special feature of this damascus is its slightly coppery hue.
The handle of this paring knife is made of rosewood, a solid wood that is resistant to humidity. The different shades of brown make this handle unique to each knife.
To complete the handle, a bolster in pakka wood is added. This is a composite material created from resin and laminated wood to resist temperature variations, while being antibacterial. Light in color, the bolster contrasts perfectly with the rosewood for an elegant result.
With its octagonal shape, this Japanese knife is ideal for all cooks, whether left- or right-handed!
Finally, wood paste is added to fill the gaps where the blade meets the handle. The entire assembly is watertight, preventing small food items from slipping inside.
Caring for a VG10 damascus knife
This handcrafted knife should only be washed by hand with a non-abrasive sponge and a mild detergent. Once washed, dry immediately to store in a dry place.
