VG10 rainbow Takeshi Saji Japanese knives are handcrafted by Japanese blacksmith Takeshi Saji. This craftsman is highly regarded in the field of cutlery, and is a true expert! His Japanese kitchen knives are appreciated for their elegance and finesse, and he uses ancestral forging techniques to create original designs that appeal to Japanese chefs. Takeshi Saji has been certified as a Traditional Master Craftsman since the 1990s by the Japanese Ministry of Economy.
The master craftsman's workshop is located in Takefu Cutlery Village, a place where many cutlery smiths gather. It's a stronghold where craftsmen can share experiences, materials and know-how. They are all gathered in the same place, so they can continue the tradition, which they pass on to new apprentices who, in turn, can pass it on to others.
An original blade for this paring knife
This Japanese paring knife features a damascened blade made up of several layers of steel. In fact, this structure consists of forging a rigid steel core which is covered by several alternating layers of softer steel. This technique gives your blade optimum balance, while protecting its core.
Moreover, the core of this blade is made of Japanese VG10 steel, a high-quality alloy produced by the famous steelmaker Hitachi. It contains 1% carbon, the key element in increasing the blade's hardness. Your blade therefore has a hardness of 60HRC on the Rockwell scale, giving you excellent edge retention and a remarkable cutting edge! Very practical, it also allows you to space out your sharpening sessions.
This core is then covered with several layers of softer steel, which are superimposed to create the damascus. The blade of a damascus knife features elegant waves of random patterning, unique to each piece. The special feature of this damascus is its original, slightly coppery hue! What's more, the blade has been polished for a highly refined mirror effect.
A damask knife with an elegant handle
The handle of this handcrafted Japanese knife is made of rosewood, a solid species that is resistant to humidity. The wood features elegant brown nuances for a warm design.
The handle is complemented by a bolster in light-colored pakka wood, which forms a link with the blade. This is a composite material created from laminated wood and resin, all hot-pressed together. It has the strength of composite, but with a natural grain for an authentic look.
The handle is octagonal in shape to suit the hands of all cooks, right- or left-handed! It offers a comfortable, ergonomic grip, especially for prolonged use.
Finally, wood putty is added where the blade joins the handle to fill any small gaps. This makes it watertight and prevents water from seeping inside.
To care for your handcrafted Japanese knife, wash only by hand with a soft sponge, avoiding getting the handle wet. Once cleaned, dry immediately to remove all traces of moisture and store in a dry place. Do not use the dishwasher or leave it to soak in the sink.
This Japanese knife is presented in a superb wooden case, for optimum protection!
