Here are the technical features of these 3 kitchen knives:
The blade
A concentrate of know-how, this blade is produced in stages. First, it has a core of 10Cr Japanese steel. This top-of-the-range alloy is renowned the world over for its excellent holding power and cutting performance (you can even sharpen it to a razor-sharp finish).
10Cr15CoMoV stainless steel already enjoys international renown for its durability and cutting performance (it can even be sharpened to a razor finish).
It is composed of around 1.05% carbon, giving it an excellent hardness of around 60 HRC on the Rockwell scale. Such a core ensures a long-lasting sharp edge, and avoids repeated sharpening.
Once the core has been shaped, it is sandwiched between 67 layers of damascus. Damascus is the age-old process of skilfully superimposing different layers of steel (alternating between softer and harder alloys) around the core of the blade. In principle, the hard steel reinforces the knife's already inherent solidity, while the soft steel adds a slight suppleness (making it less brittle without making it flexible). Damascus is also very pleasing to the eye, with waves rippling across the cutting surface (and the patterns are unique to each knife!).
The top of the blade has been press-hammered, also creating unique patterns on each blade. Beyond its aesthetic appeal, hammering is appreciated for increasing the steel's non-stick properties (a bit like honeycombing).
Sharpening
These 3 knives have been sharpened by hand on a strip of leather, using the shape of a "V" with each side at 15°. The cumulative angle is 30°, so that food is penetrated without force (the fibers are not broken). The result is formidable: you'll feel it from the very first use!
The handle
The handle is one of the main strengths of the Wusaki Damascus 10Cr. Made of olive wood, sanded and then treated, it is soft and pleasant in the hand. This noble wood's warm appearance contrasts perfectly with the cold finish of the steel. The veins are unique on each knife: guaranteed cachet! What's more, olive wood has a distinctive fruity scent!
Each handle is unique! Colors, patterns and grain can vary according to the parts of the wood used to make the handles. For example, some parts are darker than others, depending on the knots in the wood. This is perfectly normal.
It has been designed in an original, ergonomic shape to fit naturally into the palm. In this way, the thumb and forefinger that grip it can retain their full strength during handling, for firm knife control. Finally, it should be noted that Wusaki handles are slightly longer than average, to fit all hand sizes. The base engraved with the Japanese character"Tiger" gives the knives an accomplished finish. Its sandblasted appearance contrasts with the smooth surface of the steel. The three red edgings add an extra touch of elegance: attention to detail is taken very seriously at Wusaki!
Wusaki Damascus 10Cr knives will give your equipment a new lease of life: they combine materials and colors to perfection, to become exceptional pieces! With their sleek, sophisticated style, they're sure to seduce the most demanding of cooks!
The box containing the knives is a beautiful rigid black case. It features 3 recessed slots, designed to accommodate and lock the knives in a rigid foam. This elegant box makes a great gift for any knife enthusiast!
For care, we recommend gentle hand-washing in lukewarm water with a neutral soap. You can then wipe the knives with a soft cloth and store them in a dry place.
When washing, try to keep the handles as dry as possible, as wood does not like to get wet. From time to time, you can also wipe them with a soft cloth soaked in olive oil, to add shine and protection.
Important: when you receive your knives, the blade is lightly coated with protective oil. Simply wash them before 1st use to remove it.
The Damascus 10Cr olive wood range is incompatible with magnet bars due to the depth of hammering and the weight of the knives. Instead, store your knives in a block or briefcase!
