Details of this kitchen knife
This 12cmUniversal knife features a blade with a core of 10Cr15CoMoV stainless steel: this top-of-the-range steel is already internationally renowned for its durability and cutting edge quality (it can withstand a "razor" finish). It contains 1% carbon, giving it an excellent hardness of around 60 HRC on the Rockwell scale. Such a core ensures a long-lasting sharp edge, so you don't have to sharpen too many times.
The core is then sandwiched by 67 layers of damascus. Damascus is a unique method of superimposing different layers of steel (alternating hard and soft) around the blade core. The hard steel reinforces the knife's solidity, while the soft steel gives it a slight suppleness (making it less brittle). Beyond its technical advantages, damascus creates unique patterns on each knife: they undulate over the cutting surface, for an incredible visual effect.
The upper part of the blade has been press-hammered, creating unique patterns on each blade. In addition to its aesthetic appeal, hammering is recommended to increase the knife's non-stick properties (in the manner of honeycombing).
The left-hand side of the blade has been laser-engraved with the brand and range names, for even greater authenticity.
The cutting edge has been shaped into a V to ensure excellent, effortless penetration of food (so as not to break the internal fibers of the food you're cutting). Final sharpening is done by hand, on a strip of leather at a cumulative angle of 30°. The result is formidable: you'll feel it from the very first use!
Finally, the blade has a mirror-polished finish, which adds to its cachet, while also making it more resistant to corrosion (as polishing flattens the surface of the steel and makes it less porous).
The handle is a very important element in the composition of the Wusaki Damascus 10Cr knife, and is made from olive wood, which has been sanded and treated to give you a pleasantly soft feel. This precious wood, with its characteristic fruity scent, contrasts perfectly with the cold appearance of the steel. Its veins are unique on each knife: prestige assured! It has been cut into an original shape, like a sickle, to make it comfortable to grip and to fit naturally into the palm. In this way, the thumb and forefinger maintain good strength during use, for firm control of the knife. Last but not least, Wusaki handles are a little longer than the current cutlery market average, for easy handling by larger hands!
Each handle is unique! Colors, patterns and grain can vary according to the parts of the wood used to make the handles. For example, some parts are darker than others, depending on the knots in the wood. This is perfectly normal.
The base engraved with the Japanese character"Tiger" gives the knife a perfect finish. Its sandblasted appearance contrasts with the smooth surface of the steel. The three red edgings add an undeniable touch of elegance.
Careful maintenance and storage
The Wusaki Damascus 10Cr knife is a little jewel: the combination of materials and colors makes it an exceptional piece. At once simple and slightly sophisticated, it will appeal to even the most fastidious of cooks!
Each Wusaki knife comes in a high-quality, shock-proof box. The elegant box makes it easy to give to a knife enthusiast. Wusaki knives are manufactured by a small company located north of the city of Guangzhou, the capital of Guangdong province in Western China. This province is historically renowned for its knife-making expertise. Wusaki expertise is entirely governed by French manufacturing standards established for professionals in the sector.
For maintenance, we recommend gentle hand-washing in lukewarm water with a mild soap. You can then wipe the knife with a soft cloth and store it in a dry place. When washing, try to keep the handle as dry as possible, as wood doesn't like to get wet. From time to time, you can also wipe the handle with a soft cloth soaked in olive oil, to add shine and protection.
Please note: upon receipt, the knife blade is lightly coated with protective oil. Simply wash before 1st use to remove.
The Damas 10Cr olive wood range is incompatible with magnet bars due to the depth of the hammering and the weight of the knives. Instead, store your knives in a block or Bag!
