The Wusaki Fujiko 10Crnakiri knife is a must-have for cutting vegetables and herbs! Its high blade ensures fast cutting of your vegetables, saving you time in the kitchen. It is also suitable for large vegetables such as cabbage or salad, but be careful not to cut too hard ones such as squash.
A highly efficient carbon-enriched blade
Your wusaki knife is equipped with a damascus blade, which means that it has been made with a rather rigid core that has then been wrapped in a greater or lesser number of layers of another, softer steel. The advantage of this process is a more balanced blade. The rigid core ensures a razor-sharp cutting edge that will stand the test of time. The upper layers of mild steel will balance this hardness so that your knife does not break too much during use. An increasingly rigid wire becomes increasingly sensitive to shocks. You benefit from the advantages of two steels in one knife!
This fujikonakiri knife features a 10Cr15CoMoV stainless steel blade core. This is an interesting alloy because it has been enriched with carbon, reaching around 1.05% (note that the average for Western knives is around 0.5%). This gives the alloy a hardness of 60 HRC on the Rockwell scale, synonymous with a long-lasting, effective cutting edge.
10Cr steel also has a 15% chromium content, the element that helps it resist corrosion. As a result, your knife is stainless (under standard use and maintenance).
The core is then surrounded by several layers of softer steel: this is the damascus effect. This balances the hardness given by the core, so that your knife is "softer" when you use it. In addition to bringing real structural quality, damascus gives the knife a unique design. The various superimposed layers of steel form waves on the surface of the blade, giving it lots of character! The damascus pattern is unique to each knife.
Finally, the blade features a superb mirror-polished finish that adds to its cachet. It also ensures greater resistance to corrosion: polishing flattens the surface of the steel, making it less porous.
A handle that's both efficient and elegant
Your nakiri knife wusaki fujiko nakiri knife features an olive wood handle. This has been sanded and then treated, giving you a pleasantly soft feel when using the knife. This wood has a distinctive fruity scent, as does its magnificent grain. As wood is a living material, the grain is unique to each knife. Olive also has a number of interesting advantages, such as its density, which makes it less susceptible to warping, and its good resistance to humidity.
With its slightly domed shape, the handle is ideally suited to the shape of your palm, and is suitable for both right-handed and left-handed users.
A mosaic rivet in the center of the olive tree adds a touch of originality. Both ends of the knife feature an elegant red border.
The nakiri's stainless steel base is designed to give the knife good overall balance when held in the hand. The Japanese character "Tiger" is engraved on it, giving the knife a perfect finish.
Finally, a stainless steel bolster forms the link between the handle and the blade.

All Wusaki knives in the Fujiko range come with an elegant case decorated with a crouching Sumo to protect them from damage. The case is ideal for storing the nakiri knife knife safely when not in use, or makes a great gift idea for a knife enthusiast.
Hand-washing is recommended here, under lukewarm water with a mild detergent. Afterwards, wipe the knife dry and store it free of all traces of moisture. When cleaning, be sure to keep the handle as dry as possible, as water and wood do not mix well. In fact, you can apply an oil-soaked cloth to the handle from time to time to protect it and make it shine. Of course, soaking the handle in the sink and putting it through the dishwasher are not recommended.
The knife is made in Guandgong province in Western China, the most renowned province for knife and cutting tool manufacturing. Manufacturers in this province have a reputation in this field that goes back several decades.
