This Rocking Santoku 19cm knife is an original, Japanese-shaped knife. It's a multi-purpose model that lets you handle a variety of food families, just like a Western chef's knife (meats, vegetables...). It features a curved blade, with a pronounced point, which creates a rocking effect when cutting, for a natural movement. It is particularly useful for chopping herbs, for example.
Its blade is made of NITRUM®stainless steel, an alloy concentrated in nitrogen to increase the blade's hardness (a composition specially developed by Arcos). It boasts a hardness of 57 HRC, giving you a sharp edge that stands the test of time, for long-lasting performance. It is also easy to maintain with a Sharpening steel. It's a very good steel for regular use. Also, the knife is forged, i.e. made from a single solid bar of steel. It is then heated and pressed into its final shape. Because it comes from a single block, it is much stronger, with no welds to weaken it over time.
The knife features a new-generation cutting edge, the fruit of the latest technologies in the sector. Its total cutting angle, called Silk Edge®, is 24/25°: your cuts are clean and precise. The back of the blade has also been softened, a special design that adapts the cutting surface to the specific gestures of chefs. Its bolster also features a new design, allowing total sharpening of the wire to guarantee perfect cutting quality.
The handle is made of black POM, a highly resistant synthetic material, particularly in the face of temperature variations and detergents often encountered in the kitchen. It is enriched with Bactiproof Silver® treatment, which effectively fights bacteria. 3 stainless steel rivets secure the POM to the full tang blade.
