The HORL®bread knife that slices without crushing
The HORL® Brotmesser bread knife ensures precise cuts every time, from a crispy baguette to a hearty country loaf! Its 24-cm blade combines Sandvik 12C27 steel with a particularly ingenious serrated design. Its handcrafted hexagonal oak handle provides a stable grip and a unique style. The result: even slices, intact crumb, and far fewer crumbs on the cutting board!
A design suited to every type of bread
The 24-cmblade ismade of Sandvik 12C27 stainless steel, a steel prized in cutlery for its fine grain and cutting qualities. Its hardness of 59–60 HRC offers an excellent balance between edge retention, precision, and ease of maintenance. It provides good corrosion resistance when washing and drying instructions are followed.
Its Triple Pro Cut profile features a serrated blade composed of three complementary elements:
-
- The tips grip the crust and pierce it without excessive effort. They make it easy to cut through
- even
- the crispiest loaves
- The serrations then progress through the crumb, minimizing tearing and
- crushing
- The flat sections guide the blade across the entire width of the loaf to ensure a smooth, precise cut
This design ensures optimal slicing, even on thick or irregularly shaped loaves. The crumb is better preserved and crumb loss is minimized—your cutting board will thank you!
The flat grind provides a stable and consistent geometry. Each side of the blade is sharpened at a 15° angle, for a total angle of 30°. This configuration ensures smooth progress through the bread and a precise cut along the entire length of the blade.
A carefully crafted handle
The handle is made of oak through several manual steps: gluing, sanding, and then oiling. This meticulous work results in a surface that is pleasant to the touch, with smoothed edges and a harmonious finish.
Its hexagonal shape is more than just a design feature. Its various facets create multiple points of contact with the hand and limit the handle’s rotation while cutting. This keeps the knife properly aligned, even when slicing through a dense loaf or a particularly tough crust.
This stable grip allows you to guide the blade without gripping the handle too tightly. The sleek design complements the HORL® collection and the HORL® 3 oak sharpening block, creating a cohesive set in your kitchen.
Each handle has a unique appearance, due to the natural variations in the wood and the handcrafted nature of the work. As a result, two knives may exhibit slight visual differences, while retaining the same hexagonal shape, the same ergonomic design, and the same cutting performance.
Cleaning and Caring for My HORL® Bread Knife
Wash the blade by hand only, using a soft sponge and standard dish soap. Dry it immediately after washing to protect the steel and the oak handle. Do not put it in the dishwasher: high temperatures, prolonged exposure to moisture, and harsh detergents can damage the wood and dull the blade.
To maintain the edge, this model is compatible with HORL® 3 sharpeners. Maintain a 15° angle on each side to preserve the geometry specified by the manufacturer.
Use the honing surface of the HORL® sharpener regularly. It removes small irregularities that appear on the edge during cutting and helps maintain a sharp edge. Regular use helps preserve the blade’s effectiveness without waiting for it to lose its sharpness completely.
