The Wusaki Sakin 20cm chef knife combines cutting efficiency with remarkable aesthetics. Its damask blade and gold-leaf handle create an elegant contrast that immediately catches the eye in the kitchen. With its 20cm blade, this knife is a versatile model capable of handling a wide variety of cuts: vegetables, herbs, boneless meats or fish. It offers a good range of movement and allows you to work with precision on your board.
The blade measures 20cm, an ideal size for a chef's knife. It provides a good working surface for both fast cuts and more precise gestures.
It has a core of 10Cr15CoMoV stainless steel, an alloy containing around 1.05% carbon. This high content ensures a long-lasting cutting edge and good cutting capacity. This steel is enriched with chromium, molybdenum and vanadium, elements that contribute to corrosion resistance and wire stability.
The blade reaches a hardness of around 60 HRC on the Rockwell scale. This level of hardness ensures good edge retention while remaining easy to sharpen with a suitable stone.
Surrounding the core is a damascus structure of 67 layers of steel. This construction strengthens the blade while creating visible wavy patterns all over its surface. This characteristic pattern provides visual relief and also protects the core of the blade.
The blade'sflat cutting edge enables straight, ambidextrous cutting. It favors good insertion into food and precise control of the cutting gesture.
The handle has a strong visual identity thanks to its original composition. It's made of resin into which carbon fiber and gold leaf nuggets are injected. The term Sakin means "gold dust", in reference to the golden flakes visible in the material.
The resin provides a stable, moisture-resistant handle that feels good in the hand. It protects the decorative elements while creating a smooth, comfortable surface for use.
Carbon fibers add strength to the structure, while gold inclusions create an elegant play of light. Each handle features a slightly different pattern, reinforcing the knife's unique character.
The construction is based on two stainless steel rivets, accompanied by a central brass mosaic rivet, which ensure that the inserts are firmly attached to the tang.
A stainless steel bolster reinforces the junction between blade and handle, while the bevelled stainless steel base balances the knife overall. This knife provides a stable, comfortable grip for repeated cutting.
To keep your Wusaki kitchen knife in excellent condition, always wash it by hand with a soft sponge and neutral soap. Do not use the dishwasher, as it may damage the cutting edge and materials. Dry the blade carefully after cleaning to avoid any traces of moisture. Use a wooden or synthetic board to preserve the edge of the blade.
To maintain optimum cutting performance, regular sharpening with a stone is recommended. Between sharpenings, a light pass with a rifle can help straighten the edge. Store your knife in its protective case, on a magnetic bar or in a knife block.
Wusaki knives are manufactured by a small facility located north of the city of Guangzhou, capital of Guangdong province in western China. This region has a long tradition in the manufacture of knives and cutting tools. Production is based on controlled industrial methods and rigorous selection of the materials used for each range.
Wusaki's expertise is fully supported by French manufacturing standards established for industry professionals. This approach ensures that our knives are reliable, well-assembled and suitable for regular use in the kitchen. Each model is designed to offer the right balance between cutting performance, ease of use and durability.
