A damascened blade designed for precision

At 17cm, the blade of this santoku offers an excellent compromise between maneuverability and efficiency. It is particularly well suited to fast, repeated cutting, especially of vegetables.

Its core is made of 10Cr15CoMoV stainless steel, containing around 1.05% carbon. This composition provides a high-performance, long-lasting cutting edge, while the presence of chromium ensures good resistance to corrosion.

The blade reaches a hardness of almost 60 HRC, a level that ensures good edge retention over time, while remaining accessible to sharpening with a suitable stone.

It is reinforced by a damascened structure of 67 layers of steel, which protects the central core and provides those characteristic wavy patterns. Beyond its visual appeal, this construction enhances the blade's overall strength.

Theflat cutting edge ensures clean penetration of food and precise cutting. It also ensures comfortable use for both right- and left-handed users.

A handle with a sophisticated design and reliable grip

The handle stands out both visually and technically. It is made of resin, with carbon fiber and gold-leaf nuggets injected into it. The term Sakin, meaning "gold dust", refers directly to these luminous inclusions.

The resin provides a smooth, stable and moisture-resistant surface, suitable for regular use in the kitchen. It protects decorative elements while guaranteeing comfort in the hand.

Carbon fibers reinforce the handle's overall structure, while gold flakes create a unique visual effect. Each piece has a slightly different appearance.

The handle adopts a Western shape with a beveled base, designed to offer a natural grip and good control when cutting. It is secured by two stainless steel rivets and a central brass mosaic rivet, ensuring a solid assembly. The stainless steel bolster reinforces the junction with the blade and contributes to the knife's overall balance.

Using and maintaining my Wusaki Sakin santoku knife

Wash your Wusaki damasked santoku by hand only, using a soft sponge and neutral soap. Do not put it in the dishwasher or soak it in the sink, to preserve its sharpness and materials. Dry the blade immediately after washing to limit any traces of moisture. Use a wooden or synthetic board to protect the edge.

Regular sharpening with a stone maintains optimum cutting quality. Between sharpenings, you can use a light gun to sharpen your knife. Store your knife in its case, on a magnetic bar or in a suitable block.
