Description

Precision for deboning work

The Wusaki Sakin boning knife is designed for fine work on cuts of meat. Its 15cm blade enables you to follow the contours of bones and separate flesh with precision. This type of knife is particularly useful for removing bones, trimming a piece or working on delicate areas. Its size offers a good balance between control and efficiency, without being cumbersome.

It allows precise gestures, with good visibility of the cutting area. Supplied in a storage box, it's easy to keep and makes a great gift idea.

A blade designed for clean, controlled work

The 15cm blade is designed to facilitate the technical gestures involved in boning. It allows you to work with precision, while maintaining good cutting capacity.

Its core is made of 10Cr15CoMoV stainless steel, an alloy containing around 1.05% carbon. It provides an efficient cutting edge, capable of making clean cuts on meat. The blade achieves a hardness of around 60 HRC, ensuring consistent cutting quality with regular use.

The blade is reinforced by a 67-layer damascus structure, providing strength and stability. The wavy patterns visible on the surface also give the blade an elaborate appearance.

Last but not least, the wire'sflat cutting edge favors direct penetration of flesh, making it easy to follow the natural lines of meat.

Ergonomics designed for precise gestures

The boning knife handle is made of resin injected with carbon fiber and gold leaf nuggets. The range is named Sakin, a term that means "gold dust", and evokes these visible inclusions in the material.

The resin provides a stable, moisture-resistant surface suitable for kitchen use. It ensures a good grip, even when working with precision. The carbon fibers inside reinforce the handle's solidity, while the gold flakes create a unique visual effect. Each knife has its own unique look.

Its Western shape with bevelled tip allows a natural grip, essential for controlled gestures. The handle assembly is based on two stainless steel rivets and a central brass mosaic rivet, ensuring reliable attachment. The stainless steel bolster reinforces the junction with the blade, and the stainless steel base contributes to the overall balance.

How to preserve your knife

Clean your Damascus boning knife by hand only, using a non-abrasive sponge and standard soap. To preserve the integrity of your knife, do not use a dishwasher or soak it in the sink. Dry the blade immediately after washing to avoid any traces of moisture. Use a wooden or synthetic cutting board to maintain cutting quality.

As soon as the cutting edge becomes less effective, you can sharpen the knife with a stone to restore its cutting efficiency. Store your knife in its case, on a magnetic bar or in a suitable block to avoid shocks.

Highly organized production

Wusaki knives are manufactured in the Guangdong province, north of Guangzhou. This region is well known for its cutting tool industry, making it an ideal environment for this type of production. Wusaki relies on a structured organization, with precise control of the manufacturing stages and careful selection of the materials used.

Model development follows French manufacturing standards established for industry professionals, guaranteeing consistency in design and performance.
