Sakai Takayuki was founded in the 1950s and is based in the heart of the town of Sakai, renowned in the world of Japanese cutlery. Historically famous for making the katanas worn by the samurai, the town of Sakai has passed on its traditions to Sakai Takayuki, which now combines ancestral techniques with modern technology.
Drawing on this heritage and know-how, Sakai Takayuki is committed to offering high quality Japanese kitchen knives, suitable for professional chefs and amateurs alike!
A small, efficient and precise blade
This Sakai Takayuki knife features a damascened blade, a structure in which several layers of flexible steel are superimposed around a rigid steel core. This process creates elegant damascene patterns that are much appreciated, and gives your blade optimum balance!
What's more, damascus also plays a crucial role in optimizing your blade! Its core is made ofJapanese VG10 steel, a high-quality alloy with a carbon content of around 1%. This steel is hardened using a low-temperature cooling technique, ensuring a hardness of 60HRC on the Rockwell scale.
The alloy also contains around 15% chromium, providing additional resistance to corrosion. However, due to its high carbon content, your blade must be carefully maintained to avoid oxidation.
The core is then enveloped by 33 layers of softer steel, which overlap to form the damascus. The purpose of this construction is to balance the core by providing more "flexibility" to prevent the blade from breaking. With these superior layers, the blade is less sensitive to micro-shocks when cutting, thus reducing the risk of breakage.
The surface of the blade has been hammered to add a touch of authenticity and contrast to your Japanese knife. This hammering also has a practical aspect, as it acts like a honeycomb to prevent your food from sticking to the sides of your knife when cutting.
This damascus knife has a handle made from Spanish mahogany, a robust species characterized by its glowing brown hue. As wood is a living material, the veins on the handle are unique! Mahogany is a light but strong wood that resists impact well, and a layer of clear varnish is added for added strength.
A damask knife with an ergonomic handle
The handle of this Japanese knife is shaped to suit the hands of all cooks, left- and right-handed alike! It's ergonomically designed for controlled handling and comfortable use, especially over long periods of time!
A stainless steel bolster links the handle to the blade, balancing your Japanese knife. In addition, 2 stainless steel rivets complete the handle and securely hold the full tang blade. So your knife is reliable and safe to use.
To maintain this Japanese knife, you should only clean it by hand with a soft sponge, avoiding wetting the handle. Once washed, dry it immediately to remove all traces of moisture and store it in a dry place. Do not put in the dishwasher or leave to soak in the sink.
