Description

A kiritsuke with a 33-layer damascus blade

The Damascus Western 19cmKiritsuke knife features a damascened blade, i.e. it contains a core of rigid steel which is then surrounded by 33 alternating layers of softer steel. This gives your blade a unique look and a lot of cachet.

The damascus layers are not only aesthetically pleasing, but also ensure the blade's balance. The core here is made of Japanese VG10 steel, a high-quality alloy containing almost 1% carbon and hardened with ice. Carbon is the element that ensures the hardness of an alloy, and its ice-hardening gives the blade a hardness of 60 HRC, synonymous with a long-lasting, sharp edge.

Thanks to this hardness, the blade of your knife won't need to be sharpened too regularly, as its cutting edge will perform well over time.

The alloy also contains around 15% chromium, ensuring good resistance to corrosion. However, as steel contains a high carbon content, it is important to maintain it carefully to avoid oxidation marks.

This rigid core is surrounded by 33 alternating layers of softer steel: the damascus effect is created. This balances the blade's hard core by making it more supple. This does not make the blade flexible; it simply makes it less sensitive to impact and breakage. It's true that the more rigid a steel is, the more sensitive it is to breakage. Damascus compensates for the alloy's rigidity.

The top of the blade is then hammered, adding to the character of the blade by contrasting with the damascus. The hammering also serves a practical function by preventing food from sticking to the blade, a little like honeycombing.

A Western-shaped handle

Your Kiritsuke knife has been cut to a Western shape, making it very comfortable to hold. In fact, the heel of the handle features a finger rest that is particularly useful for intensive cutting.

The handle of this knife is made from Spanish mahogany, a species with a reddish-brown hue renowned for its durability. As wood is a natural material, the veins running through it are unique to each knife. Mahogany is shock-resistant and lightweight, and is protected by a transparent glaze.

The wood is attached to the full tang blade with 3 rivets, and a Bolster joins the blade to the handle. All components are made of stainless steel.

The Kiritsuke knife must be hand-washed with a non-abrasive sponge and mild detergent. The handle must not be run under water to preserve it, and putting the knife in the dishwasher or leaving it to soak in the sink are actions to be proscribed. Once the knife has been washed, dry it immediately to remove all traces of moisture, then store it in a dry place.

Sakai Takayuki: a Japanese company with ancestral know-how

Sakai Takayuki was founded in the 1950s. It is based in the town of Sakai, Japan, which is why it includes the town's name in its title. Sakai is renowned as the cradle of cutlery in Japan, where samurai katanas were forged.

The blacksmiths of yesteryear were able to pass on their methods and know-how to subsequent generations, and the techniques have now reached Sakai Takayuki. The brand combines this know-how with modern visuals, using all its expertise to bring you quality Japanese knives.
