Fukito Pakka San Mai knives offer a pleasing design combined with quality materials and high efficiency.
Case composition:
- 1 9cm paring knife: a small, practical and indispensable knife for peeling and cutting small fruits and vegetables, ideal for precision work.
- 1 13cm universal knife: similar to the paring knife but larger, it is still easy to handle and adapts to larger foods.
- 1 18cm honeycomb santoku knife: the Japanese-style all-purpose knife. Its slightly curved blade creates a natural rocking motion for easy cutting. The honeycombed blade makes the cutting surface less sticky, so food doesn't stick.
- 1 21cm chef's knife: the most widely used knife in the kitchen, for chopping, mincing and mincing all types of food (boneless meat, fish, vegetables, etc.).
Knife blade :
The blade has a San Maï structure: a rigid alloy core surrounded by a layer of softer steel that balances the final structure. This design makes the blade more resistant, since the components of the different alloys are complementary. The superimposition of the different steel layers can also be seen on the cutting surface.
First, in the center of the knife, we find10Cr15CoMoV stainless steel, which can be compared to VG10 steel. Like the latter, it has a very high chromium and carbon content:
- The carbon, with a final content of 1.05%, is used to improve the steel's rigidity and ensure a long-lasting cutting edge. The resulting hardness is +/- 60 HRC on the Rockwell scale;
- Chromium, at 15.5%, helps combat corrosion.
This core is surrounded by a layer of softer steel that protects it completely. This steel is also stainless.
What's more, the blade has undergone a special vacuum heat treatment. Unlike standard heat treatment, where certain elements present in the air (hydrogen, oxygen...) can react with the metal, a vacuum process creates a protected atmosphere to keep all the alloy's components intact. This makes the process much more advantageous.
A stainless steel bolster links the handle to the blade. Its gently sloping surface makes the knife easy to grip naturally.
Finally, the blade has an attractive satin blurred finish on both sides, creating a unique effect!
Knife handles :
Made from pakkawood, a highly resistant composite material. Also known as pakka wood, it's a blend of laminated wood and resin that are hot-pressed together. Although it is not, the result resembles natural wood due to the unique veins present on its surface. It's a highly advantageous material, since it's antibacterial and resistant to temperature variations and humidity.
An elegant mosaic rivet in the center of the handle adds a touch of exoticism and originality to the knife. The light shade of pakkawood contrasts with the satin-finish blade, while a red/gold border links the two.
The handle is complemented by a stainless steel base that perfectly balances the knife's weight.
The handle is suitable for both right- and left-handed users.
Care:
We recommend hand-washing with a sponge and mild detergent. Once the knife is clean, wipe it dry immediately to remove any traces of moisture, then store it. Do not use the dishwasher, or soak it in the sink.
The case :
Made of black polyester, it is resistant and durable. The material used is thick to provide greater security for your blades and accessories. The case remains lightweight, however, to avoid any pain when carrying it.
The case has 9 slots, each 13cm long, to accommodate the handles of your knives and utensils. Each slot is secured by a small elastic band to prevent movement. The slots are long and wide enough to facilitate storage of your knives, spatulas, marys etc. A large, full-width Velcro fastener secures your longest utensils.
As soon as the Velcro is in place, a polyester flap folds over the case to ensure maximum protection for all your equipment, which is completely covered. So you're not in direct contact with the blades when opening or closing the case. This ingenious flap also features 2 additional storage pockets: insert an apron, a pen, a small notebook, a phone charger... Finally, this case rolls up to close itself, saving you space.
Open dimensions: (H) 48 x (W) 60 cm
