Thanks to its long, serrated blade, this Fukito Pakka San MaiBread knife makes it easy to cut all types of bread. In fact, the teeth will slice the crust and crumb instead of crushing them. They can therefore be used not only for breads, but also for brioches, sandwich loaves, etc.
An advantageous blade:
The first thing to note is the San Maï structure. This term designates a 3-layer blade: a rigid core is surrounded by a layer of softer steel, which protects it. The result is a more balanced, stronger alloy. The superposition of steels is visible on the bottom of the blade, with the small wave running along the edge.
At the heart of this San Maï construction is a stainless steel, 10Cr15CoMoV, which is very similar to VG10 steel. In fact, like VG10, it has a high chromium and carbon content, which enhances its capacities:
- Carbon (1.05%) improves the steel's rigidity, so that it holds its edge longer. The result is a hardness of +-60HRC on the Rockwell scale,
- Chromium (15.5%) improves corrosion resistance, among other things.
A layer of stainless steel is then sandwiched around the core for added protection.
For an impeccable finish, the blade is vacuum heat-treated. This process is advantageous because, in the case of standard heat treatment, certain elements present in the air (hydrogen, oxygen...) can react with the metal. The fact that this takes place in a vacuum creates a protected atmosphere, enabling the blade to retain its full potential.
A stainless steel Bolster links the blade to the handle. Its gently sloping surface makes for an easy, natural grip.
Finally, the blade has an attractive satin/fluted finish on both sides.
A nice, pleasant handle:
The handle is made of Pakka wood (or Pakkawood). This composite material combines laminated wood and resin, which are hot-pressed together. The result is perfect for the kitchen world, as it is shock and moisture resistant. An elegant mosaic rivet in the center of the handle adds an exotic touch to the knife. The luminous shades of Pakkawood contrast nicely with the satin-finish blade, and a red/gold border links the two.
A stainless steel base finishes the handle and balances the knife's weight. The handle is suitable for both right- and left-handed users.
A magnetized box serves as the knife's case, so you can keep it for when you're not using it, or give it as a gift!
Care:
We recommend hand-washing with a sponge and mild detergent. Once the knife is clean, wipe it dry immediately to remove all traces of moisture and store it. Do not use the dishwasher or soak the knife in the sink.
