The Fukito Rosewood Damascussantoku knife is a versatile model, widely used in Japan. It can be used to cut fruit and vegetables, meat (boneless), fish... It is very useful for chiseling fresh herbs thanks to its slightly curved blade, which creates a rocking motion. With this knife, you can also equip yourself with quality without breaking the bank!
Let's talk about the damascus blade. What is damascus based on? It's a hard core of rigid steel, surrounded by several layers of less rigid steel. The end result is a unique visual and a piece of character.
In addition to its unique aesthetic, damascus creates a balanced blade. In fact, the core is made of 10CR15COMOV stainless steel. With a carbon content of around 1.05%, the cutting edge is stiffer and retains its sharpness longer. What's more, a rigid cutting edge can be sharpened more thoroughly, for an impeccable finish and easier cutting. Its chromium content is also interesting, at around 15%, making the blade more resistant to corrosion.
This steel is then surrounded by several layers of less rigid stainless steel to balance the core. This makes it softer, but not more flexible. In fact, a very rigid steel will tend to chip more quickly because it's not flexible, which is why it's a good idea to add a softer alloy to compensate.
Finally, we can appreciate the hammered surface of the effective surface, which contrasts with the damask to great effect.
The blade also benefits from vacuum heat treatment. This process is advantageous because, during standard heat treatment, certain elements present in the air can react with the metal, even during quenching. This is the case, for example, with oxygen, hydrogen... And this can have an impact on the blade. Here, heat treatment takes place in a protected atmosphere, free from all elements. As a result, the blade can be processed to its full potential.
Between the blade and the handle is a stainless steel bolster.
The knife features a superb handle in exotic rosewood, which is both solid and resistant to humidity. This dense wood presents unique nuances: wood being a living material, the rendering differs on each model. Its main tones range from brown to dark red, with attractive dark veins providing contrast. What's more, the wood has been polished by hand.
The full tang blade is attached to the rosewood with 3 rivets. In addition, the central rivet is a mosaic that adds character to the knife, with a touch of originality to boot! The handle is ergonomically shaped, with a slightly curved base that sits comfortably in the palm. This knife is suitable for both right- and left-handed cooks.
The knife arrives in an elegant magnetic box. Give it as a gift or simply treat yourself!
Fukito kitchen knives are made in Guangdong province, Western China. This region has been historically linked with knife production for decades. Each Fukito knife is produced using techniques and materials that meet the manufacturing standards of French food industry professionals.
Care: the knife should be washed by hand with a sponge and mild detergent. Do not put in the dishwasher or soak in the sink. Once it's clean, wipe it dry and store it in your case, or on a magnetic bar, in a block, in a drawer...
