The Fukito Rosewood Damascus chef knife lets you carve meat (without the bone), chop herbs, slice vegetables... In fact, it's the all-purpose knife, and a very good choice of model if you're not well equipped and want to vary your cuts. What's more, it's a great value for money, given the quality materials used in its design.
The knife's blade is damascened, i.e. it features a hard core of rigid steel, which is surrounded by several layers of less rigid steel. The result is an unmistakable visual effect that lends the piece a great deal of character.
Beyond its aesthetic appeal, damascus gives a balanced blade. The core is made of 10CR15COMOV stainless steel. This has a very interesting composition, with a carbon content of around 1.05%, which makes the cutting edge stiffer and more durable. What's more, a rigid cutting edge can be sharpened more thoroughly, for an impeccable finish and easier cutting. The 10CR15COMOV also has a chromium content of around 15%, giving it excellent corrosion resistance.
This steel is then surrounded by several layers of less rigid stainless steel to balance the core. This makes it softer, without making it flexible. In fact, a very rigid steel will tend to chip more quickly because it's not flexible, which is why it's a good idea to add a softer alloy to compensate.
The blade is also vacuum heat-treated. This process is advantageous because, during standard heat treatment, certain elements present in the air can react with the metal, even during quenching. This is the case, for example, with oxygen, hydrogen... And this can have an impact on the blade. Here, heat treatment takes place in a protected atmosphere, free from all elements. As a result, the blade can be processed to its full potential.
The top surface of the blade has been hammered, creating a beautiful contrast with the damask side. A knife with character!
A stainless steel bolster links the blade to the handle.
The knife features a beautiful handle in rosewood, an exotic wood appreciated for its resistance to humidity and its strength. This dense wood presents superb nuances, which change on each knife (wood is a living material, so the rendering differs on each model, and that's what makes it so beautiful!) Its colors range from brown to dark red, with lovely dark veins providing contrast. What's more, the wood has been polished by hand.
The full tang blade is attached to the rosewood by 3 rivets, for a perfect hold. The central rivet is a mosaic that adds a touch of originality to the knife! The handle is ergonomically shaped, with a slightly curved base that sits comfortably in the palm. This knife is suitable for both right- and left-handed cooks.
